Father’s Day Casserole

Original recipe makes 1 9×13-inch baking dish

Ingredients:

1 (16 ounce) package bulk pork sausage
3 cups frozen hash brown potatoes, thawed
1/4 cup milk, or as needed
1 (16 ounce) can refrigerated buttermilk biscuit dough
1 1/2 cups shredded Mexican cheese blend
5 eggs

Directions:

1. Preheat an oven to 350 degrees. Grease a 9×13-inch baking dish.
2. Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 5 minutes.
3. Drain and discard any excess grease. Stir in the hash brown potatoes, cooking and stirring until potatoes are browned, about 5 minutes more.
4. Line the bottom of the prepared baking dish with a layer of buttermilk biscuits, splitting the biscuits in half to completely cover the dish.
5. Spread the sausage and hash brown mixture evenly over the biscuits, and sprinkle the Mexican cheese on top.
6. Whisk together the eggs and milk in a bowl, and pour over the cheese.
7. Bake in the preheated oven until the eggs set, about 25 minutes.

2. Roll frozen bread dough out into a rectangle. Brush dough with beaten egg.
3. Arrange pepperoni, mozzarella cheese and parmesan cheese over the dough. Sprinkle on the Italian seasoning.
4. Roll up dough like a jelly roll and pinch seam to seal; place, seam side down, on prepared baking sheet.
5. Bake in preheated oven for 40 minutes, or until golden.

Grandma’s Sour Cream Pound Cake

Original recipe makes 1 10-inch Bundt Cake

Ingredients:

2 cups butter, softened
3 cups white sugar
6 eggs, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 pinch ground mace
1 cup sour cream
1 tablespoon confectioners’ sugar for dusting

Directions:

1. Preheat the oven to 350 degrees. Grease and flour a 10-inch Bundt pan or 9-inch tube pan.
2. Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla with the last egg.
3. Pour the flour mixture into the bowl alternately with the sour cream, mixing until just incorporated. Transfer the batter into the prepared pan and spread it smooth.
4. Bake in the preheated oven until a toothpick inserted in the cake comes out clean, about 1 hour and 20 minutes. Cool for at least 10 minutes before inverting pan onto a cooling rack, and tapping out the cake.
5. Dust with confectioners’ sugar before serving.
