Thawing Frozen Turkey:

I use the Quick Method.

"Quick" Thawing:
Place turkey in its original wrapping in sink and cover with COLD water. Change the water every 1/2 hour to maintain the temperature. Allow 1/2 hour per pound to defrost the turkey. Most turkeys will take from 5 to 10 hours to thaw.

Refrigerate after thawing to bake the next day.

INGREDIENTS (Nutrition)

* 3 tablespoons Dijon mustard
* 3 tablespoons butter, melted
* 5 teaspoons honey
* 1/2 cup fresh bread crumbs
* 1/2 cup finely chopped pecans
* 3 teaspoons chopped fresh parsley
* 6 (4 ounce) fillets salmon
* salt and pepper to taste
* 6 lemon wedges

DIRECTIONS

1. Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
2. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Got Beef?

Lentil Beef Stew
Boil until meat is fork tender:
2 pounds of 1" cubes of beef
2 quarts of beef broth
1 can of Italian diced tomatoes

When the beef is soft, take it out of the pot with a slotted spoon, then add:
1 can of corn,
1 cup lentils,
1 cup salad noodles,
1 cup grated carrots,
1 cup sliced celery.
Cook for one hour until the lentils are really tender.

While the soup was cooking I took the beef and shredded it.
I added 1 cup of beef back into the stew.

The remaining beef will be used for a this dish.

I didn't have all of the ingredients so I changed a few things.

Tex Mex Casserole a version of Mocha's recipe

2 cups of cooked shredded Beef roast

1 15 oz. Can Diced Tomatoes drained

1 small onion diced

1 pkg Old El Paso Smokey Chipotle Taco Seasoning

1 Can Kidney Beans (Rinsed & Drained)

Mix all together and pour into large (11x16) greased casserole dish.

Top with 1 c Shredded Cheese

------------
Topping for casserole:

Mix all of these ingredients together and spread over other mixture.

2 pkgs Betty Crocker Corn Muffin Mix in pouch

1 c Shredded Cheese

2 eggs

1/2 cup milk

1/4 c creamed corn

(no butter)

I made this one last month and froze it, it thawed out well. It was really great! I served it with orzo with toasted almonds in it.

Cranberry Pork Roast ~ From Woman's Day

INGREDIENTS
1 can (16 oz) whole-berry cranberry sauce
1 medium onion, chopped
1 can (5.5 oz) apricot nectar
1⁄2 cup coarsely chopped dried apricots
2 tsp cider or distilled white vinegar
1 tsp dry mustard (I added 2 T grainy dijon mustard)
1 tsp salt
1⁄4 tsp crushed red pepper
1 2 1⁄2-lb boneless pork loin roast, well trimmed
PREPARATION
1. Mix all ingredients except pork in a 3-qt or larger slow-cooker. Add pork; spoon some cranberry mixture over the top. (Can be done the night before. Refrigerate in removable crock or, if crock can’t be removed, in a covered bowl, then transfer to slow-cooker to cook.)
2. Cover and cook on low 6 to 8 hours, or until pork is tender. Remove pork to cutting board and slice. Spoon fat off sauce; serve sauce with pork

SWEET AND SOUR PORK

1/2 cup Catsup
1/2 cup Apple juice
1/4 Cup Apricot fruit spread
2 Tablespoons Apple cider vinegar
2 teaspoons Ginger root, Freshly grated
1 1/2 Pounds pork loin, lean, boneless, Cut into 3/4" cubes
8 Ounces peas, frozen, Sugar snap or snow
16 Ounces Pineapple chunks in juice, Drained
5 Ounces water chestnuts, Drained
2 Whole Carrots, Shredded
2 Cups cabbage, Napa Chinese, thinly sliced
2 Whole Garlic cloves, Minced
1 Package noodles, fresh, cooked and drained
1 Tablespoon peanut oil

In a saucepan, combine juice, fruit spread, catsup, vinegar and ginger. Continue stirring until sauce has thickened, two to three minutes.
Cook Chinese noodles according to package directions and drain.

Meanwhile in a skillet, saute pork in 1 tablespoon oil until lightly browned and nearly cooked, five to six minutes.

Add the garlic cloves, the Chinese cabbage and shredded carrots, water chestnuts and peas.

Reduce heat and simmer until snow peas are tender, about three to four minutes.

Pour sauce over pork and stir to combine.

Serve over Chinese noodles.
( I have a surplus of Thai Kitchen noodles to use up)

CrockPot Peking Pork Chops
6 pork chops about 1" thick
1/4 c brown sugar
1 tsp fresh ginger
1/2 c soy sauce
1/4 c ketchup
1-2 cloves garlic mashed
red pepper flakes to taste

Mix everything in crockpot. Cover cook on low 4-6 hours, serve over rice or noodles.

I have some frozen Tyson steak strips. :jump: Saturday's lunch


1 pound beef shoulder steaks
1 cup plain low fat yogurt (I've used Kraft Cucumber Dressing in a pinch)
1/4 cup cucumber, diced
1-1/2 teaspoons garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried oregano leaves, crushed
4 pita bread pockets, cut crosswise in half, warmed

I like to stuff the pita with thinly sliced sweet purple onion and fresh spinach for extra crunch.

1. Combine yogurt, cucumber, 1/2 teaspoon garlic, salt and pepper in small bowl; cover and refrigerate.

2. Wash hands. Combine oregano and remaining garlic; press evenly onto steaks. Wash hands.

3. Heat large nonstick skillet over medium. Place steaks in skillet; cook, turning twice, 13 to 15 minutes for medium rare to medium doneness (internal temp 150°F to 160°F).

Serving Suggestion: Carve steaks into thin slices; season with salt and pepper to taste. Serve in pita pockets with sliced onion and tomatoes and yogurt sauce. Refrigerate leftovers.

Crispy Chicken Strips
3/4 pound skinless, boneless chicken breasts
1/2 cup mashed potato flakes
1/2 cup seasoned bread crumbs
1/4 cup egg substitute
2 tablespoons olive or vegetable oil

Flatten chicken to 1/2-in. thickness; cut into 1-in. strips. In a shallow bowl, combine the potato flakes and bread crumbs. Dip chicken in egg substitute, then in potato mixture. In a skillet, cook chicken in oil for 4-5 minutes or until golden.

My kids loved these!

1 package ground turkey
1/4 cauliflower puree
1 small diced onion
1/2 cup cheese (I used a 4 cheese italian blend)
2/3 cup crushed cornflakes
salt and pepper to taste

I mixed all the ingredients together and formed patties from golf ball sized balls. Roll the patties in more cornflake crumbs. (about 2 cups) Brown in pan with just a bit of oil.

This is my variation of the Turkey Burger Drumsticks from Rachael Rays magazine last month.

Pizza Dough:


1 Cup warm water

2 Teaspoons Yeast

1 Tbsp Sugar

1 Teaspoon Salt

2 Tbsp Oil

2 - 2 1/2 Cups Flour
Put water & sugar in bowl, mix in yeast and let stand for 5 minutes until yeast doubles.
Add remaining ingredients except flour and mix.
Add the flour a half cup at a time until it's not sticky.
Oil a bowl and roll the dough in the oil, cover with plastic wrap.
Usually it can take 1 hour at room temp for dough to rise and double.
I let the glass bowl sit on a pan of hot tap water to speed the process in a cold room.

Spread on a stone sprinkled with cornmeal or a greased baking sheet - jelly roll pan.

The Pizza: BarBQ or Chicken Bacon Ranch styles
1 pre-cooked Chicken, cubed (Roasted, Smoked, or cooked in broth)
1/2 lb bacon cooked & crumbled
1 med onion finely diced
1 bottle BarBQ sauce or use RANCH dressing
1 cup tomatoes, remove seeds and coarse dice
2 cups shredded cheese of choice
3 green onions, thinly sliced for garnish

Pull chicken meat off the bones and shred. Fry bacon until almost crispy then add onion to saute until bacon is done. Mix with shredded chicken. Pour half bottle of BBQ sauce over meat and mix well. Poor remaining BBQ sauce on the flattened out dough. Add 1 cup cheese on top of sauce. Put meat mixture on top. Top with cheese and sprinkle on chopped tomatoes and bake at 325 for 17 minutes.

Lazy's Dutch Oven Stew with Pork and Vegies

this makes a large batch - approx 5-6 quarts

brown the meat in oil:
2 tsp vegetable oil
3 lbs of pork loin cubed into 1" pieces

add:
5 potatoes, peeled & cubed into 1" pieces
3 cups carrots, peeled & cubed into 1" pieces
1 cup sliced celery
1 can corn w/ liquid
1 can mushrooms w/ liquid
1 can diced tomatoes w/ liquid
2 TB Wyler's chicken bouillon granules
2 TB Wyler's beef bouillon granules
1/4 tsp black pepper, optional
1 small can mild green chilis, optional Adds a kick and warms tummy!
add enough water to cover everything in the pot.
cook on Medium Low until the pork is tender and the potatoes fall apart.
Or Bake at 275-300 degrees for 4-6 hrs, checking liquid level every hour.
Add more water or broth if necessary.

salt and pepper to taste after serving

freezes well

Spaghetti Sauce

group dinners

SERVINGS:
65-70 adults and children
50-60 adults only

Ingredients:
2 tablespoons dried basil
2 tablespoons salt
4 teaspoons dried oregano
2 teaspoons pepper
4 pounds ground beef
4 large onions, chopped
4 garlic cloves, minced
2 cans (15 ounces each) tomato paste
1 can (29 ounces) tomato sauce
4 cans (28 ounces each) diced tomatoes, undrained
2 cups water or beef broth
1/2 cup minced fresh parsley
1/4 cup packed brown sugar
optional ~ 2 cans (4 ounces each) mushroom stems and pieces, drained


Directions:
In several large kettles, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Add the remaining ingredients; cover and simmer for 4 hours, stirring occasionally. Yield: 65-70 servings (8 quarts).

I'm not fond of the pickling spices in homemade corned beef.
This recipe is from the Southern States and they dump the meat on a bun and cover it with fresh coleslaw.

Try this recipe and tell me how you like it.

Cook Time: 3 hours or more

Ingredients:
1 (about 4 pounds, 1st or 2nd cut) beef brisket
2 Tablespoons olive oil
2 teaspoons sweet Hungarian paprika
Kosher salt and freshly ground black pepper to taste
4 cloves garlic, thinly sliced
1 cup diced onion
1 cup diced celery
1 cup (8 ounces) tomato sauce
1 cup Coke or Pepsi
1 (1.5 ounces) package dry onion soup mix
Preparation:
Preheat oven to 350 degrees F. Line a roasting pan or dutch oven with foil.

Rub brisket on both sides with the olive oil. Sprinkle both sides with paprika, salt, and pepper. Place in the prepared roasting pan. Top with garlic, onion, and celery.

Whisk together tomato sauce, Pop, and onion soup mix. Pour over the top of the vegetables on the brisket.

Cover with foil and roast 2-1/2 to 3 hours, until very tender. Baste with pan juices every 30 minutes.

The brisket may be made a day in advance, sliced, and refrigerated. Reheat in the gravy.

you may never eat store-bought breakfast sausage again.

Breakfast sausage
Ingredients:
2 lbs of ground pork
1 tablespoon of sage
2 teaspoons of marjoram
2 teaspoons of thyme
1 teaspoon of brown sugar
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of cayenne pepper
optional:
2 teaspoons of red pepper flakes

Method:
1. Mix all ingredients together.
2. Form into patties and fry six minutes on each side.
Keeps in the refrigerator for a week.
Note: The spice measurements are not an exact science.
You may want to pinch off a little bit and fry it up to see if you like the flavor, then adjust if needed.

rice strogonoff

1 can of cream of chicken soup
1 can of milk (from the cream soup can)
1/2 lb of stir fry type meat ( I use a really thin meat that you need to cut up not sure exactly what its called)
flour
butter
spices ( I use garlic salt and pepper)

tenderize your meat and coat in flour and cut into little squares
put meat in melted butter in medium size pan on med heat until halfway cooked
seperate pot make rice
add soup milk and spices to meat and simmer until meat is done (usually about 15 min) serve over rice

Broccoli Chicken Bake

1 - bag (14 oz.) frozen broccoli florets

1 - can (10 3/4 oz.) cream of mushroom soup

1 - package (6 oz.) stuffing mix for chicken

1 - cup shredded Cheddar cheese, divided

1/2 - cup water

4 - boneless, skinless chicken breast halves (1 to 1 1/4 lbs.)

1/2 - teaspoon seasoned salt

1/8 - teaspoon pepper


PREHEAT oven to 425°F. Line a 13x9x2-inch baking pan with Reynolds Wrap Release Non-Stick Foil with non-stick (dull) side toward food.

MIX broccoli, soup, stuffing mix, 1/2 cup cheese and water together in a large bowl until well blended. Spread evenly in foil-lined pan.

TOP with chicken. Sprinkle with seasoned salt and pepper.

BAKE 40 to 45 minutes or until chicken reaches 170°F and juices run clear. Top with remaining 1/2 cup cheese. Cover with a sheet of non-stick foil; let stand until cheese melts.

Easy Corned Beef

buy:
1 pkg Kroger Corned Beef Brisket (which includes pickling spice packet)
3-4 cans Swanson Chicken Broth - I used the kind with garlic in it

preheat: 5 Quart crock pot set to HIGH - line with Reynold's Crock Pot liner
add in:
corned beef - including liquids from bag and seasoning packet
3 cans of boiling broth

Cook on HIGH for 4 hours.
Cook on LOWEST setting for 8-10 hours, or until a fork can flake off the meat chunks.
I started the cooking process late in the evening yesterday and let it cook on low for 10 hours overnight. It was ready to eat at 10am today, but I chose to dump off the liquids and strain them for later. I cooled the meat in a separate container, in order to firm it up, to make slicing it easier for Ruben Sandwiches.

I'll save the broth for Sunday and use leftover meat for Corned Beef, Cabbage, Potato and Carrot stew- using my crockpot again. :biggrin:
Add the cooked corned beef towards the end (since it just needs to be heated up right before serving) or use it as a garnish to top off the stew in each bowl.
