This is my favorite borscht recipe (although I do make a vegetarian one too sometimes but we like meat in it.) It freezes really well. I also will freeze beets by themselves for use later on in this.

I am a big fan of Borsht, but I served a mission in Russia so I ate it often. I have only made it a few times. I should make it again and see if my kids like it.
Keep in mind that Borsht is a lot of base and not a lot of veggies, so if you like a thicker soup add less water or base. I would rather have a lot of veggies and other things than mostly soup base. And I LOVE putting a dollop of sour cream in it. |

That link looks like a good one. You will want to put a lot of veggies in there, especially potatoes. If you add meat it will make it even more filling. Let the sour cream be optional. Some people hate it.

My BIL served in Russia and introduced my family to the soup. We just love it and my 4yo asks for it all the time! It is easy, just alot of chopping.
