Super Easy & Yummy Pumpkin Bar Recipe

This is my absolute  favorite pumpkin dessert that we have during the Fall and Winter months. I love making them because it makes a big pan which is enough to feed a crowd. It’s the perfect one to make for a family or friend gathering. The ingredients are super simple too. Enjoy!

Pumpkin Bar Recipe

Ingredients:

  • 4 eggs
  • 1 2/3 c sugar
  • 1 c canola oil
  • 1 can (15 oz) pumpkin
  • 2 c flour
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

    Instructions:

    1. In a bowl, beat eggs, sugar, oil & pumpkin.
    2. Combine flour, cinnamon, baking powder, baking soda, & salt and them gradually add to pumpkin mixture.
    3. Lightly coat jelly roll pan with cooking spray and pour mixture in.
    4. Bake at 350* for 25-30 minutes. Cool completely before frosting.

    Cream Cheese Frosting

    1. Beat ingredients together in small bowl until smooth.
    2. 1 pkg (8 oz) cream cheese, softened
    3. 1/4 c butter, softened
    4. 1 tsp vanilla
    5. 1/2 pkg powdered sugar (about half of a 2 pound bag)
    6. Enjoy!

Easy & Yummy Chocolate Zucchini Cake Recipe

Zucchini Chocolate Cake

Ingredients: 

  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 ½ cups (318 g) granulated sugar
  • ¾ cup buttermilk (see note)
  • ½ cup (113 g) melted coconut oilavocado oil, canola oil or vegetable oil
  • 2 cups (283 g) finely shredded zucchini
  • 1 ½ cups (213 g) all-purpose flour
  • ½ cup (43 g) natural, unsweetened cocoa powder
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder

Instructions:

  • Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan with cooking spray and set aside. I always use an aluminum/metal baking pan.
  • In a large bowl, whisk together the eggs, vanilla, sugar, buttermilk and oil.
  • Stir in the shredded zucchini.
  • Add the flour, cocoa powder, salt, soda and baking powder.
  • Stir until just combined and no dry streaks remain.
  • Spread the batter evenly in the pan and bake for 25-35 minutes until the top springs back lightly to the touch and a toothpick comes out clean or with a few moist crumbs.
  • Let cool completely.
  • Serve with a dollop of lightly sweetened chocolate whipped cream (see note) or spread with chocolate frosting and cut into squares.

Our Favorite Campfire Treats!

We’ve spent as many weekends as we could out enjoying the mountains with friends and family this summer! Which means we’ve also cooked a lot of different treats around the campfire. It’s been so fun trying different treats each time we go out. Here’s some of our favorites you should try the next time you’re around the campfire!

Sweet & Salty S’mores – This is similar to your regular s’mores but instead of using graham crackers, try ritz crackers!

S’mores in a Bag – this one we haven’t tried yet but we have everything packed and ready for this weekend. Just get the individual size bags of teddy grahams and add your chocolate and roasted marshmallows inside. Easy and sounds like it won’t be as mess.

Roasted Starburst – I’ve heard talk of this one for a few years now but this was the first year I’ve tried it. Just unwrap your starburst and roast them the same way you would your marshmallows. You’re cooking them just until they start to bubble and almost crystallize.

Woof’em Treats – We’ve made these in years past and it’s always fun to come up with different filling ideas. If you’ve never had these all they are is biscuits that you’ve popped open from the cans. You wrap them around a woof’em stick and bake them over the fire. Then fill with your favorite sweets. We’ve done pie fillings, pudding, nutella, cream cheese and always top them with whipped cream.

Banana Boats – these are a classic and one my kids love. Simply open a banana and slice them long ways. Then put inside some mini marshmallows, chocolate chips and other sweets you desire. Wrap it all in foil and let it warm up over the fire.

Smore’s Bar – this has been a hit this summer. We’ll add everything you can thing to a tray and lay it out for all to enjoy. Some of our favorite items are; nutella and peanut butter on graham crackers, raspberries inside roasted marshmallows, fudge cookies with marshmallow inside or even reese’s with marshmallow.

Simple & Easy Camping Meal Ideas!

We’ve been enjoying a lot of our summer outdoors! It’s one of the best ways for us to unwind and get away from everything as a family. But being mom I still need to cook and make sure everyone has full tummies, so I’ve put together some easy meals you can plan for when camping!

Hotdogs – maybe a no brainer but hotdogs with buns, chips and maybe some fruit is a great meal to plan for while camping. You can roast them over the fire or just boil them in water. Don’t forget about pigs in a blanket as well. A great alternative to regular hot dogs.

Breakfast Burritos – you can easily make these ahead of time and take them frozen or assemble them the morning of. Either way it’s a great way to wake up to something yummy.

Bagels – we love having cream cheese and bagels in the morning. We’ll get a variety bag so everyone has one they’ll like. If you’re not having bagels in the morning it’s usually cereal.

BBQ Sandwiches – This is another great make ahead meal you can plan for either lunch or dinner. I just cook the meat in the crock pot before we go and store it in an airtight container. Then slap it on some buns and you’re good to go.

Kebabs – These are perfect to cook over a campfire. You can even have everyone make their own with everything you’ve brought already chopped up and ready to poke. We’ll put peppers, chicken, pineapple, mushrooms and more on each stick.

Chili – If you’re headed somewhere cold, this is a must. I will usually cook my meat at home and then bring everything to dump in the pot together and heat up. We’ll serve it with rolls or corn bread, which ever I have on hand or time to make.

Salsa and Chips – don’t forget about the snacks. We usually go hiking or walking while we’re out camping which means often times when we get back we’re hungry but it’s between meals. So a fun and easy snack to have on hand is some salsa and chips.

Walking Tacos – If you haven’t heard of these before they’re awesome for so many different reasons! Just get those one person chip bags and add your taco toppings to the bag! We’ll usually have sliced tomatoes, cheese, olives, lettuces, sour cream and salsa.

Pasta Salad – I have a cold pasta salad recipe that’s yummy to have ready to eat. It’s simple to throw together and honestly, it’s better the next day because it’s been marinading all night.

EASY Patriotic Foods to Make This 4th of July!

Who’s excited for the 4th of July? This is one of my favorite holidays! I love getting together with family and friends and celebrating the holiday. You’ll find us at the parades and fireworks every year but in-between all the excitement we’ll always find time for food! Here a few of the patriotic foods we’re throwing together to enjoy this 4th of July!

I love how simple these are but add that patriotic touch! The kids are going to love the sprinkles as well.

I mean you can’t have the 4th of July BBQ without the watermelon so why not dress it up for your family this year!

We’re excited for these this year since we just put a fire pit in but you could even make yours in the oven (just don’t put the cheese on until after 😉 ).

Super Easy & Yummy Easter Dessert Recipe: Delicious Mini Fruit Tarts

Easter is this Sunday which means a lot of families will be getting together to celebrate. When we celebrate holidays I know a lot of attention goes on the food. What will you eat? What will you serve? Since the kids will be getting a lot of candy dong Easter egg hunts, I thought having a small yet yummy dessert would be perfect. These mini fruit tarts are always a winner, plus you get some fruit in you too! Win-win!

Delicious Mini Fruit Tarts Recipe

Ingredients:
**Depending on your party size you could always cut this recipe in half and just do one package of cookies and half the recipe below.

  • 2 16.5-ounce packages refrigerated sugar cookie dough
  • 2 8-ounce packages cream cheese, softened
  • 1 cup powdered sugar (confectioners’ sugar)
  • 1/2 cup heavy whipping cream
  • 2 tablespoons lemon juice
  • 2 tablespoons grated lemon zest
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blackberries
  • 1 cup fresh blueberries

Directions:
1. Pre-heat oven to 350 degrees and grease well  a mini muffin pan.
2. Divide cookie dough into 48 equal slices and roll them into small balls, place 1 in each muffin space.
3. Bake for 12-14 minutes until they are golden brown. Rotating pan halfway between.
4. Remove from oven and immediately press centers of cookies with a 1/4 cup measuring cup or other small cup to form a cup. Be careful to not push all the way to the pan- you don’t want holes.
5. Let cool for 5 minutes.
6. Remove from pan and let cool completely.
7. In a large mixing bowl add cream cheese, softened,  powdered sugar (confectioners’ sugar), heavy whipping cream, lemon juice and grated lemon zest. Mix using an electric beater on medium until smooth.
8. Pipe or spoon in mixture to cooled cookie cups. Top with berries!
9. Serve immediately or chill.

DIY Frozen Homemade Rolls!

I LOVE a good homemade roll! Sometimes it’s not so bad having to make them but more times than not I find myself out of time or just not willing to put forth the effort to make rolls from scratch. That usually leads me to the famous Rhodes frozen dough rolls. Which I love but with the inflation I’m taking a step back and trying to save pennies where I can which lead to me creating my own make ahead freezer rolls!

Guys, I’m sold and don’t know why I haven’t done this sooner! They’re just like the frozen rolls you’d find in the freezer section at your local grocery store. Already rolled and in individual servings making it easy to just bake up the amount you want. Best part is, they taste like home made rolls, yum! There’s nothing like a homemade roll slathered with butter (or my favorite, honey butter) to go with your dinner. This recipe was perfect timing with the Christmas holiday here. We were assigned to bring rolls but I just know I’m not going to want to be in the kitchen all day. So I whipped up a batch of these make ahead freezer rolls that are just waiting in the freezer for Saturday.

You can do basic with your rolls and top them off with butter or get fancy. Add some rosemary, grated parmesan, or any other garnish you can think of! You just can’t go wrong with these homemade freezer rolls!

Make Ahead Freezer Rolls

2 cups milk
2 Tbsp Yeast
1/4 cup sugar
6-6 1/2 cups flour
2 tsp salt
1/2 cup butter, softened
2 eggs

Begin by heating up your milk until it reaches between 105-110 degrees. (You can do this in the microwave but I prefer on the stove top) Whisk in the yeast and sugar and let sit for 5 minutes. Meanwhile combine 5 cups of flour and salt in a mixer. Cut the butter into small cubs and slowly add to the mixer while on low speed. Set asked. Whisk the eggs into the milk and yeast mixture. Once combined, pour mixture into the flour mixture on low. Gradually add remaining flour if needed until dough forms. Cover the dough and let rise for 1 hour or until doubled in size.

Punch down down to deflate. Divide your down into 3 equal sections (this is easiest to do with a food scale). Each section should make 12 rolls depending on desired size. Place each roll on parchment lined cookie sheet and freeze for 2-3 hours. Remove rolls from cookie sheet and place in ziplock bag for up to 1 month.

To bake: Place frozen rolls about 1-inch apart on lightly greased baking dish. Let rise for about 4 hours or until doubled in size. Preheat oven to 375 degrees, bake for 15-18 minutes or until golden brown. Brush top with melted butter and serve.

Pull-Part Sourdough Ranch Bread!

Have a fun gathering coming up? Need the perfect appetizer to take with you? Or maybe you just want something yummy to snack on! These are so delicious that no picture could do it justice. You’ll just have to try this out yourself.
1 unsliced loaf of (round is preferable) sourdough bread
8-12 oz cheddar cheese, thinly sliced
3 oz bag Oscar Mayer Real Bacon bits
1/2 cup butter, melted
1 Tbsp Ranch dressing mix

Using a sharp bread knife cut the bread going both directions. Do not cut through the bottom crust. Place slices of cheese in between cuts. Sprinkle bacon bits on bread, making sure to get in between cuts. Mix together butter and Ranch dressing mix. Pour over bread. Wrap in foil the entire loaf in foil and place on a baking sheet. Bake at 350 degrees for 15 minutes. Unwrap. Bake for an additional 10 minutes, or until cheese is melted.

Note: I could only find sliced bread so I just sliced it the other direction as well. It doesn’t work as good but taste just the same.

I think I might add this tomato soup to go along with our grilled cheese! It’s so easy, you just put some sour cream in a bag with a little milk to thin it up a bit. Then draw circles in your soup. After words you just take a toothpick and run it out to create the lines!

The BEST and EASIEST Cinnamon Roll Recipe For This Conference Weekend!

I love waking up to the smell of Cinnamon Rolls that are warming in the oven! But I’m not the mom wanting to spend hours in the kitchen so finding this amazing recipe that’s quick and easy was just what I needed to carry the tradition on! This recipe was given to me by a friend when I was explaining my problem of not wanting to be in the kitchen all day. We’ve now made these cinnamon rolls multiple times for different holidays, family get together and just to give out to neighbors. I’m sure you’re going to enjoy these just as much as we do!

One Hour Cinnamon Rolls
3 1/2 cups warm water
3/4 cups sugar
1/2 cup oil
6 Tbsp yeast

Combine these together and let sit (I cover mine so the yeast will activate) for about 15 minutes. Then add in:

1 Tbsp Salt
3 Eggs
10 1/2 cups flour

Mix together for 10 minutes and then let rest for 10 minutes. (if it’s still really sticky, mix for a minute longer)  After it’s rested for 10 minutes place some oil on the counter (yes oil not flour) and roll out your dough. You’ll want to divide your dough in half and press half of it into a rectangle shape. Spread out 1/4 cup of melted butter. Then in a bowl mix together 1 cup brown sugar and 1 tbsp cinnamon. Once mixed well sprinkle over the butter. Roll up tight but not too tight. Take a bread knife (one with a serrated edge) and cute into 12 even slices and place on a greased sheet. Repeat with other half of dough. Let rise (timing depends on the temp in your kitchen but you want them to be large in size) After, bake at 400 degrees for 12-15 minutes. To make your frosting combine:

1 cube butter
2 dashes of salt
2 tsp vanilla
6 cups powdered sugar

You’ll want to add these to your rolls when they’re still warm but not right out of the oven, let them sit for a minute or two before adding your frosting. Then, enjoy!

Just a side note, these make 24 LARGE rolls! I usually half this recipe when making it just for my family unless we’re planning on sharing in quick case I’ll make the full recipe!

Quick and Easy Dump Crock Pot Meals!

It’s soccer/sports season and for us that means lots of game nights with little time to cook dinner and get it on the table. So I’ve thrown together some dump freezer meals! What is that you might ask? Basically, you take all of your ingredients and “dump” them into a Ziploc Gallon Bag and freeze them. Then when it is time, you can take all of the contents, throw it into the crock pot and cook. No effort on your part. And if you are doing it during the first few weeks after a new baby or your busy months, it’s easy enough that any member of your family can do it- so you don’t have to. So here are a few of our family’s favorite dump recipes.

White Chicken Chili

  • 2 pounds boneless skinless chicken breasts cubed
  • 2 cans great northern white beans drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces canned green chilies drained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 32 ounces chicken stock (not needed until ready to cook)
  • 1 cup shredded cheddar cheese (not needed until ready to cook)

Place all ingredients into a zip lock bag and freeze (expect the chicken stock and cheddar cheese). When ready to cook add the 32oz of chicken stock and cook on low for 6-8hrs. Add cheese and stir until melted. Top with salsa, sour cream and/or cilantro.

Turkey Macaroni

  • 1 1/2 pounds ground beef
  • 2 10.75 ounces cans of tomato soup
  • 12 ounces frozen corn
  • 1 small onions, chopped
  • 6 ounces mushrooms, sliced
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups dry macaroni noodles

Cook macaroni noodles for 4 minutes (you want noodles to still be slightly firm). Cook the ground beef and onions until no longer pink. Let cool. Add all ingredients into the ziplock bag. When ready to cook, dump bag into crock pot and cook on low for 6-8hrs.

Creamy Ranch Chicken

  • 5-6 Chicken Breasts
  • 1 can cream of chicken soup
  • 1 packet of Ranch Dip Mix
  • 1 packet of Zesty Italian Mix
  • 8 oz box of Cream Cheese

Put the first 4 ingredients into your zip lock bag and freeze. Once ready to cook dump into crock pot and cook on high for 3-4 hours or low for 6-8 hours. During the last hour add in the box of cream cheese and stir.

Sloppy Joes

  • 1 1/2 pounds ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 3/4 cup ketchup
  • 1 1/2 tablespoon brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon prepared mustard
  • 1/4 cup barbecue sauce
  • 1/2 cup water

Cook ground beef and onions until no longer pink. Add all ingredients to a zip lock bag and mix well. When ready to cook, add to crock pot and cook on low for 6-8hrs. Top on hamburger buns.

Zesty BBQ Chicken

  • 5-6 Chicken Breasts
  • 1 12 oz Bottle BBQ Sauce
  • 1/2 Cup Italian Salad Dressing
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Worcestershire Sauce

Put chicken in bag. Stir all other ingredients together in a bowl then pour into the bag. Cook HIGH 3-4 hours or LOW 6-8 hours.

Teriyaki Chicken(I did two bags of this one)

  • Bag of Baby Carrots
  • 1/2 Red Onion in Large Chunks
  • (1) 20oz can pineapple (undrained)
  • 1/2 or 1 Garlic Cloves Chopped
  • 2- 3Chicken Breasts
  • 1/2 cup Teriyaki Sauce

*Add 1/4 cup Teriyaki Sauce to Mixture right before cooking. Cook on HIGH for 4 hours or LOW for 8 hours. Serve over Rice.

YUM! I love peach season. Recently we got a lot of peaches from my friends’ home. They are SO good, but I need to do something with them before they go bad. Cobbler recipes are so yummy and perfect for a September evening. Check out this recipe.

Southern Peach Pie Recipe

INGREDIENTS

PEACHES

  • 2 bags Frozen peaches, 20 ounces each
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Almond extract, (optional but recommended)
  • ½ tablespoon Cinnamon
  • ½ teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • ½ stick Butter, unsalted room temperature
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice

COBBLER TOPPING

  • 2 cups Flour
  • ½ cup Granulated sugar
  • ½  cup Brown sugar
  • 2 tablespoons Baking powder
  • 1 tablespoon Cinnamon, reserve ½ for garnishment
  • 1 stick Butter, unsalted cold
  • ¼ cup Boiling hot water (see notes)
  • ½ teaspoon Salt
  • 3 tablespoons Granulated sugar, to dust top of cobbler

    INSTRUCTIONS

    1. Preheat oven to 375 degrees
    2. Spray a 9×13 baking dish with non-stick spray. In the same dish, add peaches, sugars, vanilla and almond extract, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Mix it until combined.
    3. Cover the dish with foil and cook mixture in the oven for 20 minutes.
    4. While peaches are cooking, combine flour, both sugars, baking powder, salt, and ½ tablespoon of the cinnamon.
    5. Work the cold stick of butter into the flour mixture by breaking it up with a pastry cutter or with hands. Work it in until it looks like coarse meal or crumbles.
    6. Add the hot water and stir together with a spoon until it’s just combined. Cobbler should have a drop biscuit-like texture.
    7. Remove peaches from the oven and spoon dough mixture over the peaches. Make each dough droplet about the size of a golf ball leaving a tiny bit of space between each one (see photo and notes below) to ensure they cook through.
    8. Peaches will not be fully covered. Combine sugar and and remaining ½ tablespoon cinnamon and sprinkle the mixture over dough.
    9. Place the dish back in the oven uncovered and cook for an additional 30-45 minutes, until crust is golden brown.
