Default chicken tchakabelli (sp) and pink pilaf

If you don't have tomato juice, just throw canned tomatoes in the blender works great for this. I don't have exact measurements because I can't find the recipe right now but i just "wing" it all the time.

brown the chicken and put it in shallow baking pan.
slice up some onions, brown a little and layer on top of chicken.
mix abourt 1 1/c cpups tomatoe juice a splash of white wine and 2 tbsp paprika pour over chicken. bake at 350-400 until juices run clear usually about 40 minutes.

Pilaf You need a dutch oven type pan for this with a lid that seals

1 chopped onoin
1/2 stick butter ( I usually use much less than this)
2 c rice.
2 c chicken broth
2 c tomatoe juice


saute onions in butter just until clear, add the rice and cook, stirring about 2 minutes. Add the chicken broth and tomato juice, heat to boil. put lid on and bake in 400 degree oven for about an hour. Check half way through, add more liquid if necessary. The chicken will make a nice juicy broth that is very good poured over the rice. HTH.
