Although hard cooked eggs are not the "main" ingredient, here is a recipe that was shared from a co-worker. It is really good and one that I am going to do to use my leftover eggs...

Hot chicken salad casserole
2 C cooked chicken 3/4 C mayonnaise
1 tsp lemon juice 1/4 c butter, melted
1 (10 3/4 oz) can crm chicken soup 3 hard boiled eggs
2 1/2 C cornflakes or 2 C corn chex 1 C brown rice, uncooked
1 Tbsp minced onion 1/2 tsp salt
1 can sliced water chestnuts, 1/3 chopped
1/2 C sliced almonds
Cook chicken and shred. Cook brown rice in 2 1/4 c water. Combine shredded chicken, rice chopped water chestnuts and chopped boiled eggs. In a separare bowl, combine mayonnaise, minced onion, lemon juice, soup and salt. Add to chicken mixture. Spoon into 9x13 pan that has been sprayed with vegetable spray. Casserole can be made the night before and refrigerated. Crush cereal into crumbs in ziploc bag and add melted butter. Spread crumbs over casserole. Sprinkle sliced almonds over crumbs just before baking. Bake at 350 degrees for 30 minutes. Serve warm.
