This is our plan so far-

Chicken ramen salad -
-- cabbage
Chicken fajitas with Russian cream
-- peppers, tomatoes, strawberries, blueberries
Ravioli with baked veggies and salad
-- lettuce, tomatoes, peppers
Chop suey ( the recipe that was posted in the other thread) and fruit
-- cabbage, peppers, celery, cantaloupe,
Pizza and orange fruit salad
-- tomatoes, peppers, apples, oranges, bananas, cantaloupe
Baked chyotes and leftover fruit
-- chyotes and fruit

My MIL makes radish mashed potatoes. I love radishes and it taste okay. I'll have to ask her for the recipe.

I need some recipes to use up apples. I probably have 20 in my refrigerator. Any suggestions???

We do this when we have a lot of extra apples. My kids LOVE them sprinkled with cinnamon and sugar.

Tuesday- Meatballs with steamed broccoli and roasted sweet potatoes
Wednesday- Salad with pulled pork (cucumbers and radishes)
Thursday- Pesto pasta with pan fried yellow squash
Friday- Leftovers

I got two baskets this week :-) I do plan on slicing and dehydrating a pineapple this week. My kids LOVE it! Tastes like candy.

Monday - Grilled Cheese and Tomato Soup

Mon. Roasted Tomato Soup http://www.101cookbooks.com/archives...up-recipe.html (I then add a little pesto before serving) with Salad and Cantaloupe
Tues. Hamburgers with Corn on the Cob, Salad and Cantaloupe
Wed. Pork Chops and Green Beans (The green beans are from a a week ago)
Thurs. Taco Salad
Fri. Red Lentil Vegetable Curry
Saute 1 onion, green pepper, 1 T salt and 2 oil until onion begins to brown.
Add 4 med cloves minced garlic, 1 t minced ginger, 1 t. garam masala until fragrant, about 45 seconds.
Add 1 1/4 c red lentils, 1 c coconut milk, 1 chopped potato, 1 chopped sweet potatoe, 1 chopped carrot and 1 c shredded cooked chicken, 3 c water (or stock) Bring to a simmer and let simmer until lentils break down 20-30 minutes.
Stir in 1/2c chopped cilantro and 3 medium diced tomatoes. Serve over rice.
(I usually saute the vegetables at lunch, then throw it all in the crockpot until dinner)
