Default Good Camping Recipes?

We're planning on camping quite a bit this summer, and I'd love to try some new recipes. We like to cook with our dutch oven in the coals, and we do have a small oven and stove top.

We tried this recipe for breakfast last weekend and it was awesome! I used sausage instead of bacon and precooked it at home. We doubled it and it fed four adults, one teenage boy, and five kids with about one adult serving left over. Amish Breakfast Casserole

Dutch Oven Chicken

4-6 Chicken Breast (1-2 pp)
Potatoes
carrots
onions
1 stick of butter
salt/pepper
(seasonings you like- we've used lemon-pepper and its yummy)

Cut your potatoes (chunks), carrots and onions. Throw everything in the Dutch oven, cook and enjoy.

Pretty simple but tastes sooo good done in the Dutch oven this way.

I think it was the latest issue of Family Fun that had different takes on the old hobo dinner. It mixed up different meats with different sauces/flavorings and veggies. Ah, yes. Here it is. I liked how they gave different flavor profiles.

Chicken enchiladas:
flour tortillas
sauce
1 can of chiles
1 can of chicken
1 can of cream of chicken soup or 1/2 cup milk
1 can of green enchilada sauce
1/2 cup sour cream
shredded cheese cheddar or Monterrey jack

Make a layer of tortillas to cover the bottom of the dutch oven. Mix the items for the sauce together in a bowl then pour all of the sauce onto the bottom layer of tortillas. Make another layer of tortillas then sprinkle with the cheese. Cook until heated through and cheese is melted.
