Recipe: Crockpot Summer Vegetables

I wanted to share with you a delicious way to eat your vegetables in the summertime. I love eating my veggies this way. You can put these in the crockpot in the afternoon and have a delicious side dish all ready for you at dinner. It is so easy and crowd-pleasing too.

4 medium red potatoes (or any kind you like)
2 small zucchini (with skin on, and cut quite fat as they cook quick)
1 medium onion, sliced up large
4 large carrots, peeled and cut
1 large sweet potato, peeled and cut into medium chunks
handful of sugar snap peas, (optional)

Put the cut vegetables into a large bowl and toss with a few tablespoons of olive oil.
Then sprinkle on 1 packet of Italian Seasoning (found by the ranch packets in the store).
Mix together well and put into your crockpot. I cook mine on low for about 5-6 hours, and they are just perfect!

The great thing about this recipe is the versatility! You can put in any veggies you would like. Make it for your family today, you will love it.
