Freezer Meals: Mini Meatloaves!

Over the years I have done a lot of freezer meals. It is just so nice to have things on hand and it doesn’t take a lot more time to make multiples of one recipe. When ground beef goes on sale, it’s a great time to make these mini meatloaves. When I do this recipe I usually form 2 regular-sized meatloaves and do the rest mini. I don’t cook the larger loaves ahead of time.

Mini Meatloaves

(makes 3 dozen mini loaves or 2 large loaves + 18 mini loaves)

6 lb ground beef
6 C bread crumbs
2 C milk
4 beaten egg
2 t dry mustard
2 T worcestershire sauce
salt & pepper to taste
1 C ketchup
1/2 C corn syrup

Combine milk, egg, worcestershire sauce, seasonings and crumbs. Let stand 5 minutes. Mix in beef (I prefer a food processor for this).

Bake at 350* for 20 minutes.

Combine ketchup and corn syrup and brush onto meatloaf. Bake 10 minutes more. Cool completely.

Flash freeze the mini loaves and then you can combine them into one bag for storage. To cook, simply heat in the microwave (from thawed or frozen)

*For large loaves, shape & freeze (don’t bake ahead). Thaw in the fridge & bake at 350* for one hour. Mix 1/2 C ketchup + 1/4 C corn syrup, brush (or pour) on top and cook for another 15 minutes.
