Tips for Cleaning Fruits and Vegetables

As spring sets in we enjoy more sunny days and warmer weather. Gardens and farms across the country begin to send their produce out and it will soon appear at the local farmers markets and produce sections of grocery stores. Their colorful displays call to me, begging me to take them home. I feel it’s important that we get our daily dose of fresh fruits and veggies. I enjoy purchasing fresh looking produce and I love it even more if it’s from a local farm.

Bringing home this colorful array of nature’s goodness always brings questions from my kiddos. “Can I eat that?” or “I’m hungry.” are just a few of the first things I hear as I try to put away the groceries. Sometimes I even find an open contain of strawberries or bags of grapes with about half missing before I can even get them into the fridge. I guess this is just to be expected living in a house with 4 growing boys.

I have to admit this makes my stomach turn a little when I see the fruits and veggies missing. I always think who touched that or what pesticides were on that? Maybe I’m a little OCD when it comes to cleaning my fruits and veggies but I really feel like it’s important.

It is estimated by federal health officials that nearly 48 million people get sick by contaminated food each year. This is often caused by produce that has been contaminated. There are many ways produce can become contaminated. It can happen during the growing season, by animals, by harmful substances in the soil and water, and by the many people that handle the produce as it is processed from one place to another. We can even contaminate produce after we purchase it by the way it is handled and prepared. All of this heightens my OCD about cleaning fruits and vegetables before they are eaten.

So here are a few tips I’ve picked up for and thought I would pass along.

1. Always wash your hands for about 20 second with warm soapy water before and after preparing produce.
2. Cut away any damage or bruised areas of the produce before preparing.
3. Always wash produce before you peel it. This prevents dirt or bacteria from being transferred from the outside of the fruits or vegetables to the inside.
4. Use a clean vegetable brush to scrub firm produce like melons.
5. Throw away the outer leaves of lettuce and cabbage.
6. Dry fruits and vegetables with a clean cloth or paper towel.

DIY Dulce de Leche

I made a discovery of epic proportions this weekend!  Dramatic?  Maybe a bit, but if you – like I – didn’t know this before, I think you’ll be happy I shared!

My boys found a recipe they were dying to try, but it called for Dulce de Leche.  Whether that is available in my store or not, I don’t know, I never looked.  Since I had cans and cans of sweetened condensed milk in my pantry and knew you could use it to make dulce de leche, I wasn’t going to spend the extra money.  The internet is full of “recipes” about how you can boil a closed can of sweetened condensed milk either in a pan or in your crock pot for hours until it turns into thick, gooey, carmely goodness.

The internet is also full of stories about said cans exploding as they heat and making a thick, gooey carmely mess in your kitchen and potentially harming anyone nearby.

I will admit that I tried it once; it works, but I was nervous the whole time, so even though I knew I could do it again, I kept putting it off.  Finally, I searched the internet to see if there was another option.  I found one blogger who said that you can pour the milk into the top of a double boiler and stir it over heat for 2 1/2 hours as it cooks.  No thanks; keep searching…

BINGO!

You can cook it in the oven!!!

Turn your oven on to 425*.  Open the sweetened condensed milk and pour it into an oven safe glass pan…a pie plate is perfect for one can.  I used a bigger pyrex pan here because the recipe I’m making required 2 cans worth of the finished product.

Cover this tightly with aluminum foil.

Put the glass pan into a bigger pan – like a roaster pan – and fill with hot water up to about halfway up the sides of the glass pan.

Pop the whole thing in the oven and leave it to cook for 1 to 1 1/2 hours.  Check it once in awhile to make sure that there is plenty of water and replenish when necessary.

After about an hour, pull back the corner of the foil and have a look.  When it’s done it should be thick and brown.  (With the 2 cans that I did, it took more like 2-and-a-bit hours, but the one can was perfect after about an hour and 15 minutes).

**BE VERY CAREFUL when you open the oven door.  Open it and stand back or you will get hit in the face with very hot steam!!

Once it is dark and carmely looking, remove the pan from the water and whip it with a whisk or a fork until it is smooth.

Now just try not to eat it all with a spoon…

Make Your Own Quote Wall

I love quotes and inspirational thoughts. They lift me up and help inspire me to be a better person. I have seen ideas online on creating a quote wall, so I decided to improvise and make my own. There was a small blank wall by my kids’ bathroom and it was the perfect spot.

Instead of buying frames, I used canvases that I already had, except the 5×7 sizes. They had been under my bed for several years, so I knew they would be perfect! And I was able to use what I had a home. Love that. I got the 5×7 canvases for $1.99 each last week at Micheal’s at 60% off.

I printed my prints at Costco, high quality and the best price around. Then I just modge poged the prints onto the canvas…easy peasy. I didn’t put anything on top of the print. Then I stuck them to the wall with a 3M product…you know those one that come off clean and don’t damage the wall? It was a really fast project to do.

I am really pleased with it and my kids really like it. I heard them telling their friends the other day, “If you want to be happy, be good!” I love having positive quotes on the wall and reminders. The kids see them everyday and we talk about what they mean.
