I picked up a couple of bags of the Hershey Pumpkin Spice Kisses at my local Winco last week wanting to make some yummy cookies with them. There are many versions out there! Here is my simple version today. They are easy and delicious!

Pumpkin Spice Cookies (using Hershey Pumpkin Spice Kisses)

1 box yellow cake mix
2 eggs
1/2 c. oil
1 tsp. pumpkin pie spice*
1 bag Hershey Pumpkin Spice Kisses*

Preheat oven to 350 degrees. Mix all ingredients together well. Bake for 7-9 minutes. After removing from the oven, immediately place a kiss on the center of each cookie and gently press. Let cool completely. ENJOY!!! Makes 22 cookies.

*I did freeze my kisses for 15 minutes prior to baking so they kept their shape well. They do melt when you put them on a hot cookies. Also, if you don’t have pumpkin pie spice, you can use 1/2 tsp. cinnamon, 1/4 tsp. ginger, 1/8 tsp nutmeg & 1/8 tsp allspice.
