Halloween Breakfast – Pumpkin Pancakes and Spooky Syrup Recipes

Halloween Pancake The countdown to Halloween is underway. Our house is buzzing with costume ideas and preparation for this fun filled holiday. So far we will have 1 hippie and 1 pirate joining us on our trick or treating route this Hallow’s Eve.

While my other boys are still trying to finalize their costume plans, I have been trying to come up with a few Halloween plans of my own. The internet is such a great resource to find fun ideas to add to our holiday traditions. Food is a must have at any holiday celebration and I thought this pumpkin pancake recipe might be a good way to kick off our holiday morning.

Pumpkin Pancakes
2 eggs
1-1/4 cups buttermilk
4 TBSP melted butter
5 TBSP canned pumpkin
1/4 cup granulated sugar
1/4 tsp salt
1-1/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp allspice
few drops of orange gel food coloring

Directions:

Preheat skillet and coat evenly with no stick spray.
Blend together eggs, buttermilk, melted butter, pumpkin, sugar and salt.
Combine dry ingredients, flour, baking powder, baking soda, cinnamon, and allspice. Blend into wet.
Pour small amount of batter into skillet and flip when bubbles stop. Cook on each side for 1 to 2 minutes.

Top these Pancakes off with Black Cinnamon Syrup

1/2 cup granulated white sugar
1/2 brown sugar
2 Tablespoons all-purpose flour
2 teaspoons cinnamon
1 teaspoon vanilla
1 cup water
black food coloring gel

Directions:

Mix all ingredients together except food coloring in a sauce pan. Stir and bring to a boil. Add food coloring and let boil till it thickens. Syrup can be placed in a condiment squeeze bottle and used to make spooky decorated pancakes.

This festive pancake will be our Halloween breakfast. Let me know if you try it and what you think.
