Back-To-School Tradition: Cookies & Milk

My kids started school today! I have a 6th grader, 3rd grader, and 1st grader. My oldest started middle school, the 1st grader is going all day. Plus, they started a new school. Lots of firsts today!

One of my favorite traditions when it comes to going back to school is making the kids some fresh, homemade cookies. When they get home they can eat some with a cold glass of milk and tell me about their day. It is something we all look forward to!

This is my tried and true cookie recipe. I hope you enjoy it as much as we do!

Oatmeal Chocolate Chip Cookies

1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
2 c. flour
1 tsp soda
1 tsp salt
1/2 tsp baking powder
1 tsp vanilla
2 c. oatmeal (quick or regular)
1/2 c. chocolate chips (or more if you like! Here I used mini m&m’s)
1 c. coconut (optional)

Cream together shortening and sugars. Add eggs and vanilla. Mix up dry ingredients in a separate bowl. Add to wet ingredients. Add in chocolate chips. Mix together well. Bake at 350 degrees for 7-10 minutes. Makes about 3-4 dozen.
