Football Snacks – Queso Dip!

Yesterday we talked about how it is the end of August which makes me so very happy. It is one of my favorite times of year. If you follow our blog you know I love football. My kids have started playing little league football, our friends on the high school team have started to play, college play starts next week and the NFL is on television. I am surrounded with football and I love it! I went to two high school games tonight and they were awesome. Football is here! There are so many different things that my family and I love about football. One of the things my family loves about watching football is the snacks that we make. We make lots of different snacks but an all-time favorite is queso dip.

 

My kids love making fun football snacks and they have quite a few favorites. One of our very favorite football snacks is queso dip. We all love homemade queso dip. There are a few take out options that are really good but there is nothing like homemade queso dip. Pair that with some good chips and any game is instantly more fun. Do you make your own queso dip? If not, you should try it! It is a perfect football snack. Here are few of our family favorite recipes to get you started.

 

Super Easy Queso Dip

 

Ingredients:

 

1 (16 ounce) package VELVEETA, cut into 1/2-inch cubes

1 (10 ounce) can RoTel Original Diced Tomatoes & Green Chilies, undrained

Ro-Tel Diced Tomatoes & Green Chilies Diced Tomatoes & Green Chiles,

 

Directions:

 

  1. Combine ingredients in microwaveable bowl.
  2. Microwave on HIGH 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring after 3 min.

 

From Scratch Queso Dip

 

Ingredients:

 

1 tablespoon butter

1 tablespoon cornstarch

3/4 cup sour cream

1 cup shredded Cheddar cheese

1 tablespoon salsa

 

 

Directions:

 

  1. In a medium saucepan over medium heat, melt the butter.
  2. Thoroughly stir in the cornstarch. Stir in the sour cream.
  3. When the mixture becomes hot and bubbly, mix in Cheddar cheese and salsa.
  4. Continue stirring until cheese has melted and mixture begins to thicken, about 10 minutes. Serve hot.

 

 

Super Easy Chili Queso Dip

 

Ingredients:

 

1 (2 pound) loaf processed cheese food

2 (15 ounce) cans chili without beans

1 pinch chili powder

 

Directions:

 

  1. In a medium saucepan over medium low heat, melt the processed cheese food.
  2. Stir in chili without beans and chili powder.
  3. Serve warm when thoroughly blended.

 

Authentic Queso Dip

 

Ingredients:

 

2 tablespoons vegetable oil

1/2 onion, diced

1 tomato, diced

10 large roasted green chile peppers, seeded and chopped

1/2 cup shredded white Mexican cheese

1/4 cup shredded Monterey Jack cheese

1/4 cup milk

salt to taste

 

 

Directions:

 

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Stir in the onion and tomato; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  3. Add the green chile; cook for 2 minutes then stir in the cheese and milk. 4. Reduce heat to low and simmer, stirring frequently, until the cheese has melted.

Did you know today is National Waffle Day? Finding out today was National Waffle Day got me thinking about waffles. Does your family like waffles? My family LOVES waffles for breakfast and while we don’t have them on school days, the weekend provides a great time to have waffles for breakfast occasionally. (I don’t count the frozen, boxed waffles we might eat on weekdays as real waffles.) We like to change up the recipes we use and change up the toppings too. We love topping with fruit and yogurt, peanut butter and syrup, chocolate chips and other yummy things. Sound good?

 

Want to celebrate National Waffle Day by making waffles? There are two things you need to make great waffles. You need a good waffle maker and a good waffle recipe. If you don’t have a good waffle maker, you can get one almost anywhere. It doesn’t take an expensive waffle maker to get good waffles. The waffle maker just needs to cook evenly and release the waffle easily. Take a look at the waffle makers on Amazon if you are in the market for a new waffle maker. If your current waffle maker sticks to the waffles a bit, use some cooking spray to help them release. Make sure you don’t overfill the waffle maker, doing that can prevent the waffle maker from cooking evenly.

Classic Crispy Waffles

Recipe makes 10 to 12 waffles

Ingredients:

2 cups all-purpose flour

1 teaspoon salt

4 teaspoons baking powder

2 tablespoons white sugar

2 eggs

1 1/2 cups warm milk

1/3 cup butter, melted

1 teaspoon vanilla extract

Directions:

  1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
  2. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture and beat until blended.
  3. Scoop the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

 

Whole Grain Waffles

Makes 6 servings

Ingredients:

2 eggs, beaten

1 3/4 cups skim milk

1/4 cup canola oil

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 cup whole wheat pastry flour

1/2 cup flax seed meal

1/4 cup wheat germ

1/4 cup all-purpose flour

4 teaspoons baking powder

1 tablespoon sugar

1/4 teaspoon salt

Directions:

  1. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in the whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt. Beat until the batter is smooth.
  2. Preheat a waffle iron. Remember to coat with cooking spray. Scoop batter onto waffle iron and cook until crisp and golden brown.

 

Cinnamon Waffles

Recipe makes 3 large waffles

Ingredients:

2 egg yolks

1 teaspoon vanilla extract

1 cup buttermilk

1/4 cup butter, melted

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 tablespoon white sugar

1/4 teaspoon salt

2 egg whites

1 pinch ground cinnamon

Directions:

  1. Preheat your waffle iron.
  2. In a medium bowl, whisk together the eggs, vanilla, buttermilk and butter until well blended. Combine the flour, baking powder, baking soda, sugar, salt and cinnamon; stir into the buttermilk mixture. In a separate bowl, whip the egg whites with an electric mixer until stiff. Fold into the batter.
  3. Scoop batter onto the hot waffle iron and cook until golden brown.

Lunch Box Ideas – Fruit Leather and Granola Bars!

This week we have been talking about how it is that time of year again – Back to School time. We talked about packing lunches and how it seems that some parents just popped right out of Pinterest and have more lunch box ideas than the rest of us. Then we talked about how there is the rest of us. We shop and pack and do our best. We try hard to make lunches our kids will love. A couple of the things my kids love to take in their lunches are granola bars and fruit snacks. These always seem like a waste of money and they don’t seem very healthy. I love it when I find healthier alternatives to these things. There are so many different things you can do instead so recipes are a must. How about recipes for fruit leather and granola bars? Here you go!

 

Healthy fruit leather and granola bars are great items for lunches! They are filling and can be made with healthy ingredients. Fruit leather and granola bars can contain fruits, vegetables and more. Pair one or both of them with a couple other items and get a super yummy and healthy lunch. Having good and varied recipes can help make this an easy lunch box choice. Here are a few of our favorite recipes. If you try one, let us know how you liked it.

 

Apple Pear Fruit Leather

 

Ingredients:

 

1 cup sugar

1/4 cup lemon juice

4 cups peeled, cored and chopped apple

4 cups peeled, cored and chopped pears

 

 

Directions:

 

  1. Preheat the oven to 150 degrees. Cover a baking sheet with a layer of plastic wrap or parchment paper.
  2. In the container of a blender, combine the sugar, lemon juice, apple and pear. Cover and puree until smooth.
  3. Spread evenly on the prepared pan. Place the pan on the top rack of the oven.
  4. Bake for 5 to 6 hours, leaving the door to the oven partway open. Fruit is dry when the surface is no longer tacky and you can tear it like leather. Roll up on the plastic wrap and store in an airtight jar.

 

 

Peanut Butter Snack Bars

 

Ingredients:

 

Parchment paper

Cooking spray

3/4 cup chopped dark chocolate

2 cups rolled oats

1/4 cup wheat germ

1/4 cup flax seeds

1 cup crispy rice cereal

1 cup cornflake crumbs

3/4 cup chopped smoke-flavored almonds

1/2 teaspoon kosher salt

1/2 cup honey

1/2 cup creamy peanut butter

1/4 cup brown sugar

2 tablespoons agave nectar

1 tablespoon canola oil

1/4 teaspoon ground cinnamon

1 teaspoon vanilla extract

 

 

Directions:

 

  1. Line a 9×13-inch baking dish with parchment paper and spray with cooking spray. Spread chocolate evenly over prepared baking dish.
  2. Toast oats, wheat germ, and flax seed in a non-stick skillet over medium heat, stirring frequently until oats are lightly golden and fragrant, about 5 minutes. Transfer oat mixture to a large bowl and stir in crispy rice cereal, cornflake crumbs, almonds, and salt.
  3. Heat honey, peanut butter, brown sugar, agave nectar, canola oil, and cinnamon in a saucepan over medium heat. Cook and stir until mixture begins to bubble, 3 to 5 minutes. Remove from heat and stir in vanilla extract.
  4. Pour peanut butter mixture over cereal mixture; gently stir until well mixed.
  5. Spread peanut butter-cereal mixture into the baking dish. Place another sheet of parchment over the mixture and firmly press into the dish until even. Allow to completely cool before removing from baking dish and slicing.
