Super Easy & Yummy Double Chocolate Zucchini (Whole Grain) Muffin Recipe

Yum! If you have some zucchini in your garden, then I’m sure you’re searching for some yummy recipes. This recipe is one of my favorite of all time. They would be perfect to make now and freeze for the kiddos school lunches. Check it out!

Double Chocolate Zucchini (Whole Grain) Muffin Recipe

INGREDIENTS

  • ¾ cup (159 g) granulated sugar
  • ½ cup buttermilkor half milk/half sour cream
  • ¼ cup neutral-flavored oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (142 g) all-purpose or whole wheat flour
  • ½ cup (43 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 ½ cups (about 283 g) shredded zucchini
  • 1 ½ cups (255 g) chocolate chips

INSTRUCTIONS

  • Preheat the oven to 350 degrees F. (If using dark coated muffin tins, preheat to 325 degrees F.) Add liners to 12-cup muffin tin or spray muffin cups with nonstick cooking spray. Set aside.
  • In a large bowl, whisk together the granulated sugar, buttermilk (or sour cream/milk), oil or butter, eggs, and vanilla until well-combined. Add the flour, cocoa powder, baking soda, salt, and baking powder. Stir until just combined and a few dry streaks remain.
  • Lightly squeeze zucchini over the sink by handfuls to wring out excess water. Add to the bowl with the chocolate chips. Stir until the zucchini and chocolate chips are evenly mixed (but try not to over mix or the muffins might be dense instead of light and fluffy).
  • Portion the batter evenly into the muffin tin, filling the cups about 2/3 full. Depending on the size of the muffin tin, you may need to bake a second batch (the recipe makes between 12-16 muffins).
  • Bake for 17-19 minutes until the tops spring back lightly to the touch. Let the muffins cool for 2-3 minutes in the pan before removing them to a wire rack to cool completely.

5 Easy Ways to Add More Veggies & Fruits into Your Daily Life

  1. Smoothie. I love to have a smoothie and sneak in all of the good stuff like spinach and flax seed. This is an easy and yummy way to get some fruits and smoothies.
  2. Veggie Tray in Fridge. I’ve noticed that if I have veggies all cut up and in plain sight, we eat more of it! So I bought this Veggie Tray from Amazon and fill it up with veggies everyday. It’s a great size that can fit in my fridge. You can just pull it out at lunch, snack time and even dinner time.
  3. Make Veggie & Fruit Grab Bags. If you are on the go a lot, then try making grab bags of fruit and veggies and put them in your fridge. You can get these Ziploc bags and add in a serving of your favorite fruits and veggies. It’s so much easier to eat something when it’s ready for you. Your kids would love it too!
  4. Load Breakfast with Fruit. We love having  crepes, waffles, and pancakes for breakfast. Instead of putting chocolate chips in them, why not add the yummy fruits like strawberries, raspberries, bananas, blueberries and blackberries. They go perfect with those breakfast items.
  5. Counter Food. Have you heard the saying, “out of sight out of mind”? It’s definitely true when you think about your items in your fridge. If you don’t see it, you don’t eat it. I love having a fruit basket on my counter full of yummy fresh fruit. You can find one here on Amazon. 

5 Super Cute Women’s Summer Hairstyles You’ve Got to Try

It’s summer time which means it’s SO hot! I have long hair so in the summer time I’m always trying to find cute ways to get my hair off of my neck. There are a ton of cute hair styles I’ve been seeing around lately. I’ve found 5 that are super doable and so cute. Check these out!

  1. Dutch Braid Pigtails. As pictured above by Pophaircuts, this is my favorite summer style this year! Check out how to do it here.

Yellowstone Bear World: 8 Tips to Know Before You Go (Money Saving Tips Too!)

Are you planning a trip to Yellowstone Bear World? It’s such a fun adventure for the entire family. If this is your first time or even your second time going, here are a few tips you’ll want to make sure to take advantage of. They will save you money and hopefully help your Bear World experience run smoothly.

  1. Entrance Fees: If you have a larger group of people, use the Group Rating for 15 or more people. You can do this even if you are in different cars. If you have less than 15 people,  you can also do the Car Load rate which is $98.97 online for 7 people. That’s only $14.13 per person instead of the $23.95 if you were just paying individually!  Those options will definitely help you save a ton of money. We adjusted with family to fill our cars up to the 7 people to maximize our savings. Also be sure to use the Senior discounts if applicable.
  2. Wildlife Excursion: Use the Group rating for this if possible. It’s only $45 for up to 7 people which is only $6.42 per person. Otherwise you will be paying $12.95 each.
  3. If you want to hand feed the baby bears you need to sign up online EARLY. Like weeks or even months in advance. We didn’t realize that until too late. So when you have your dates planned, sign up and get registered because they have limited spots.
  4. If you don’t want to spend the money to feed the bears in the truck, then make it so you get behind the Wild Life excursion truck on your drive through the park. It’s seriously so cool. You follow the truck and they stop right in front of you. Then you can watch all the bears gather around the truck and watch the people feed them. This way you can stay in your air-conditioned car, see all the bears at once, and not pay extra!
  5. Drive through the park more than once. This way you will see different animals each time you go. Definitely try and go first thing in the morning when it’s cooler, you’ll see more bears then.
  6. Bring your own water bottles. There are NO drinking fountains at Bear World. The best thing to do is have a water bottle for each person and you can refill it for free at their cafe. You can get a free water from the cafe, but sometime their line is super long. Having a water bottle would be so nice.
  7. Bring your own lunch. To save some money, bring your own lunch and eat at their covered pavilions just outside of the building.
  8. Last but not least, you need to try out their FREE samples of fudge. There are different kinds all of the time, and they are super yummy.

Easy & Yummy Strawberries and Cream Poke Cake Recipe

YUM! I’m seeing the strawberries on sale, which means it’s time to make this yummy  Strawberries and Cream Poke Cake Recipe. It’s the perfect summer dessert that the whole family will enjoy.

Strawberries and Cream Poke Cake Recipe

Ingredients

  • 1 box white cake mix 15.25 ounces
  • 1 cup boiling water
  • 1 3 ounce box strawberry flavored Jell-o
  • 1/2 cup cold water

Frosting

  • 1 8 ounce tub Cool-Whip non-dairy whipped topping
  • 1 8 ounce package cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Topping

  • 1 pound strawberries diced

Instructions

  • Make cake as directed on the back of the box for a 9×13″ pan.
  • Let the cake cool for 20 minutes and “poke” the cake with a large fork (I space my pokes about 1/2″ apart and do it until the entire surface of the cake is covered).
  • Mix together the boiling water and Jell-o until the Jell-o is completely dissolved. Pour in the cold water and mix well then pour over the cake.
  • Cover the cake with plastic wrap and refrigerate for three hours.
  • Combine the Cool-Whip, cream cheese, powdered sugar, and vanilla and beat until smooth (I have found that it’s easiest to use an electric mixer, but you don’t have to). Spread on top of cake.
  • Top with strawberries and keep in the fridge until ready to serve.

Easy Fresh Salsa Recipe- Perfect for Your 4th of July BBQ

Ingredients

1 Can Corn
1 Can Black Beans
1 Bunch of Green Onions
1 Bunch Cilantro
4 Tomatos Chopped
2 Avacodos Chopped
Dry Packet of Italian Salad Dressing (I used the Good Seasons brand)
Chips to serve

Directions

Make the Dry Italian Salad Dressing according to direction on packet (let chill for 1-2 hours if possible)
Add all ingredients into a big bowl and mix together
Pour in Italian Dressing and mix until well combined
Serve with chips and enjoy!

Tips When Exploring Capitol Reef National Park with Kids

Recently we returned from Capitol Reef National park. It was so fun. We’ve been there for many years and we never get tired of it. National Parks are so fun to explore, but when you are visiting with children it takes a bit more work. Here are a few tips when exploring Capitol Reef National park with kids.

  1. Check out  the Visitors Center & Get your Junior Ranger Packet. This is so fun for the kids. All you need to do is grab a booklet for each of your kiddos and do the activities. Then when you are done, take it back in and get your badge! These are good things for the kids to learn too.
  2. Determine abilities of your group. If you are hiking with young kids then start with some shorter walks, hikes. If you have older kids then for sure do the bigger hikes. That may sound pretty obvious, but when we are on adventures I feel like sometimes we try to over do it. Then everyone is mad at each other and it ends badly. So do what your group can actually do and enjoy it!
  3. Pack sunscreen, water and food enough for the day. When we head into the park we tend to stay longer than expected. Because of this reason, we pack more food than we think we will use. More times than not, we end up eating most of it because we stayed longer and explored more. Be over prepared and you will be grateful.
  4. Explore the Fremont Culture Petroglyphs. This is something my kids love to look at each year. They are pretty incredible. Check them out here. 
  5. Stay in a place where the kids can enjoy. We love staying at Thousand Lakes RV Park. We stay in the small cabins. This park has a nice grassy area for the kids to run around in and a pool to swim in. It’s views are amazing as well. We love having bon fires and enjoying nature.

Healthy & Yummy Frozen Yogurt Fruit Cups Recipe

YUM! I’m always looking for easy and healthy recipes for the summer time. This one looks absolutely perfect. If you need a cool healthy treat for the family, check this one out!

Frozen Yogurt Fruit Cups

INGREDIENTS

  • 1 cup oats
  • 1/4 cup natural peanut butter
  • 1/4 cup maple syrup
  • dairy free yogurt
  • Strawberries
  • Mango
  • Kiwi
  • Blueberries
  • Pomegranate

INSTRUCTIONS

  1. Start by cutting up the strawberries, mango, and kiwi into small pieces. They will be the topping for your fruit cups. 
  2. In a large bowl, combine the oats, peanut butter, and maple syrup. This will be your granola base.
  3. Line a muffin pan with muffin liners. Add about 1-2 tablespoons of the granola to each muffin cup.
  4. On top of the granola, add 3-4 heaping tablespoons of the dairy free yogurt to each cup.
  5. Top off the fruit cups by adding the fruit.
  6. Place the cups in the freezer for at least 2 hours.

Our Favorite Family Friendly Things to Do in Dinosaur Land!

Maybe you have heard of it before but Vernal Utah is known as Utah’s Dinosaur Land and rightfully so. You can find an incredible amount of dinosaur fossils, footprints and other prehistoric sites here. There are so many unique and fun things to do in “dinosaur land”. From checking out dinosaur bones to exploring the great mountain regions! Here’s some of our favorite things we did while out there and what we highly recommend others to see as well.

Dinosaur Nation Monument Visitors Center – This was one of our first stops after we got into town. (You do have to pay to enter the National Monument but don’t forget, if you have a 4th-5th grader, you can get in for FREE thanks to Every Kid in a Park! Other wise the cost is $25/vehicle)  Not only were we able to pick up a map there but they gave us some great information as to which hikes would be best, where we could find shade, stops we should make along the way and things we didn’t want to miss. I was impressed and so pleased with all the questions they answered and additional information they gave. We also were able to get our National Parks book stamped inside! If you don’t already have a National Parks Passport I highly recommend getting on. It’s been fun for our kids to take on our adventures to document all the National Parks we’ve visited! (You can pick one up while you’re at the visitors center or Amazon sells them as well.) And, they have their Jr Ranger program that your kids can patriciate in. Just ask the front desk for the Jr. Ranger booklets. Your kids can fill them out while you wonder around the National Park and then turn them in once they’re complete. They’ll earn a Jr. Ranger badge and get to keep their booklets for great memories! (all for FREE)

Dinosaur Nation Monument Quarry – This is inside The Dinosaur National Monument but worth the trip! This is where the “Wall of Bones” is found as well as the Exhibit Hall where you can learn about many of the dinosaurs found right there. Over 1,500 fossils are on display, still embedded in the cliff-side where the ancient creatures came to rest millions of years ago during the late Jurassic period. You’ll even have the opportunity to touch some of the bones. We opted to drive up to the Quarry but there is a walking trial you can take that goes from the Visitors Center up to the Quarry (I don’t recommend taking this trail if it’s hot, there’s not a lot of shade along this trail). Or you can catch the trolley that runs from the Visitors Center to the Quarry. (FREE to ride) Keep in mind right now you are required to have a entrance ticket to get into the Quarry. You can make your reservations online

Box Canyon Trial (inside Dinosaur Nation Monument) – This was a beautiful trail to take with lots of shade (which was great for the warmer days we were there). It’s a short 1/2 mile round trip trail that’s easy and perfect for all fitness levels. It’s located right next to Josie’s Cabin which had a couple picnic tables located around the property where we could eat lunch. There is also Hog Canyon trail located right there if you’re looking to explore a little more. This one is a little longer at 1.5 miles but also rated as easy. On your way out to these trails don’t forget to checkout the Fremont Mystery where you’ll see some great petroglyphs (we prefer these petroglyphs over the Swelter Shelter Petroglyphs but both are stunning) and Turtle Rock is fun to point out to the kids.

Utah Field House of Nature History – The museum is located in town and a great way to get out of the heat! They have lots of hands on activities the kids (and adults) can enjoy. You start with a short educational film about paleontology, dinosaurs and prehistoric Utah then make your way around the museum. There are a variety of rocks on display and even some that come to life under ultraviolet lights. Don’t forget to step outside for a walk around the Dinosaur Garden! There are 14 unique life-size models of dinosaurs set among local vegetation. (The museum cost $6 for adults, $3 for children and seniors and kids 5 and under are free)

Jones Hole Trail – this isn’t quite Dinosaur related but worth checking out while you’re in Vernal. You’ll even see some petroglyphs along the way. I’ll warn you now, pack LOTS of water! We ended up needing to portion water on our way back to the cars since we didn’t pack enough, so don’t be like us! This trail runs from the Jones Hole Federal Fish Hatchery down to the Green River. We didn’t go all the way to the river but took a side trail over to see the waterfall. Even with the water shortage it was fun to jump around and climb up the waterfall. We took children as young as 3 up to 11 and they were able to walk it (although it was a lot on their little legs). 

Moonshine Arches – I think this was my favorite stop! We did this the night we got into Vernal since we arrive later than planned. Luckily we had just enough time to get out to the arches and back before the sun set. You’ll take 191 out of town until you come to the sign Moonshine Arches (located just after mile marker 359. Continue along the dirt road until you come to the fork in the road, stay to the left! Follow that road until you reach the parking area. We then used the All Trails app to guide us on the trail – you’ll want this. There’s a lot of forks in the trail that aren’t marked so I highly recommend making sure you have the app loaded before you go. But it’s worth it! It’s only 1.4 miles out and back (with a few steeper parts to climb but doable for younger children). Make sure to watch out for snakes!

Red Fleet State Park – The views at this lake were breathtaking! They had just enough sand area for us to enjoy while allowing the kids to play in the water. It does drop off rather quickly so please be careful. We kept kids in life vest anytime they were in the water or playing on the paddle board or kayak. This area was perfect for both as it’s a no wake zone so you’re not fighting the waves from the boats. They do allow moterboats/jet skis on the water though so bring all your water toys with you.

5 Screen-Free Ways to Keep Your Kids Learning this Summer

How is your summer going? Ours is going really well. However, as we get closer to the middle of summer the kids tend to gravitate towards more screen watching and less reading. So I’ve come up with 5 ways to get the kids learning that is NOT on screens. These ideas may be a little out of the box, but I love teaching them in different ways.

  1. Visit Grandparents or Older Neighbors and learn about their history. Kids these days don’t take the time to actually listen to the elderly and hear what they have to say. If you take the time to actually listen, they have a lot to say. You could go with questions to ask like – what was going on in the country when you were in high school? What chores did you do when you were the kids ages? Think about what you want to learn from them.
  2. Visit a Museum. During the summer we often think about going to waterparks and swimming. Do you think about exploring a museum near you? Check out Groupon and see what deals they have available. My kids learn so much from museums and really enjoy learning.
  3. Surround your Kids with Educational Books. I’ve found out that when I have books in key places around the house, the kids will pick them up and read them more often. Do you have books in the car? Or, what about in the kitchen area? Think about where they tend to congregate and put some books there. It’s also important to go to the library often and keep new and interesting books around. They will start reading!
  4. Creative Time. Do you actually carve out some day during the day to have some creative play time? I know we are always go go go, but why not slow down and give them the TIME to use their creative brains? Grab a few items like play-doh, molding clay, paper, markers, even cardboard and duct tape! The kids can create some amazing thing if we give them the time and option.
  5. Nature Walks. We go to a lot of parks, but what about nature walks or even hikes? I found out that if we are on a walk, my kids tend to talk more to me. We have really great conversations when we are outside and away from distractions. Give it a try!

The cool thing about Groupon is you can change the city to whatever you want! If you’re heading out of town, then check out that city for the following purchases. Here are 5 different purchases that you can make on Groupon that will help with summer boredom and create some fun memories all while saving money!

  1. Vacation packages. Check out their travel section here and see what they have to offer near you…or away from you! There are some fun ideas that I haven’t even thought of. If you need to get away, this is a great place to look.
  2. Concerts and Theatre Performances. My husband and I love to go listen to concerts and see new plays. Groupon is a great place to snag some discounted tickets to some of the hottest concerts near you. Check it out!
  3. Sporting Events. Our boys love going to soccer matches, but they can be pricey! Groupon to the rescue! Check out the different sporting events near you. This would be fun to do a few times this summer.
  4. Kids Activities. This is a great one to check for birthday parties, family gatherings or for a day out with your kiddos. You can get tickets to a trampoline park, water parks, aquariums and so much more.
  5. Food & Restaurants. We love trying new places to eat. Groupon is such a fun place to scan different restaurants to eat at. This is especially fun if you are in the new city. You can change the city and check out what fun places there are to eat at that location!

Frozen S’mores Recipe- Perfect Summer Treat

I can feel summer coming in strong! The kids have their last week of school and the weather is hitting 90 degrees. It’s time to think ice cream, frozen and cold! I came across this recipe for Frozen S’mores and thought this would be a perfect summer treat to make with the kiddos. Check it out!

Frozen S’mores Recipe

Ingredients

  • 1 box instant chocolate pudding 6 serving size
  • 2.5 cups cold milk
  • 16 graham crackers
  • 7 oz marshmallow creme
  • 4 oz cream cheese softened
  • 8 oz frozen whipped topping thawed

Instructions

    • Line a 9×13 pan with foil or parchment paper, allowing paper to overhang pan.
    • In a medium bowl, whisk together pudding mix and milk until smooth and creamy. Pour into 9×13 pan and spread into an even layer. **See note**
    • Chill pudding layer while you mix up the marshmallow layer.
      In a medium bowl, beat together cream cheese and marshmallow cream until smooth. Fold in whipping topping.
    • Spread marshmallow layer over chocolate layer. Cover with foil.
    • Freeze layers about 6 hours, until firm enough to cut through (freezing time will vary depending on how cold your freezer is). Use the foil or parchment paper to remove layers from 9×13 pan and place on a cutting board.
    • Break 15 graham crackers in half. Slice pudding/marshmallow layers into 15 squares the same size as the graham crackers. If your layers have frozen very hard you may want to wait 15 minutes before slicing.
    • Sandwich layers in between two graham crackers. (Watch the video in the post for an easy way to do this.)
    • Eat right away or store sandwiches in the freezer in an airtight bag or container. Graham crackers will soften slightly if stored in the freezer for a while, and I think that makes these taste even better. After they’ve been frozen, allow them to rest at room temperature 15-20 minutes before eating for the best texture.

BLT Pasta Salad Recipe- Perfect for Summer Dinners & BBQs

During the hot summer months, I’m always trying to find a yummy salad that is filling enough to make for dinner. My kids LOVE BLTs, so this BLT Pasta Salad is perfect. It’s super easy to make too. Make it for dinner or take it to your next BBQ.

Ingredients

  • 2-1/2 cups uncooked bow tie pasta
  • 6 cups torn romaine lettuce
  • 1 medium tomato diced
  • 4 bacon strips cooked and crumbled
  • 1/2 cup ranch dressing
  • 1 Tablespoon barbecue sauce
  • 1/4 teaspoon pepper

Instructions

    • Cook pasta according to package directions. Drain. Then rinse pasta under cold water.
    • In a large bowl, combine the romaine lettuce, tomato, bacon and pasta.
    • Drizzle the ranch dressing and barbecue sauce over the top. Gently toss to coat evenly. Season with pepper. Serve immediately and enjoy!
