Cranberry Chicken Casserole

Ingredients:
1 Cup bottled French Salad Dressing
1 Envelope Dried Onion Soup Mix
1 – 16 oz Can Whole Berry Cranberry Sauce
2 Pounds Boneless, Skinless Chicken Breasts
Instructions:
1. Preheat the oven to 350 degrees
2. Mix the salad dressing, onion soup mix, cranberry sauce and chicken breasts together
3. Cook for 45 min and check chicken to make sure it’s done
4. Serve with steamed rice
I love snagging one of those yummy Rotisserie Chickens when I go to Sam’s Club or Costco (yes I have memberships to both ). There are so many yummy things you can make with them and it’s easy enough to pull the chicken right off while they’re still warm. I’ll often pull the chicken off and put it in a ziplock bag for easy lunch or dinner meals. We even love it on our pizza! So here are 10 different meal ideas you could create with a rotisserie chicken!
I love making the day fun when a holiday comes by and St. Patrick’s is no different. So I wanted to share our 3 favorites things we like to make on St. Patrick’s Day as a special treat!
First is the traditional Rice Krispies but with a twist. Instead of your usually Rice Krispy cereal, we swap them out with lucky charms. They are the perfect match to adding that St Patrick’s vibe to our treat. Plus you can’t get any easier than making Rice Krispies, they whip together in less than 10 minutes. All you need is butter, mini marshmallows and your cereal. That’s it! If you’ve never made homemade Rice Krispies Treats before it’s simple. Melt 4 tablespoons of butter over the stove top. Once melted add in 5 cups of mini marshmallows and stir continually until melts. Then dump in 6 cups of your cereal and fold until it’s all be mixed together. We then use a 9×13 (greased) and press them inside. That’s it! Simple and the kids will love helping!
One of the other things we do every year is make green pancakes! It just makes dinner (yes breakfast for dinner is the BEST!) a step up in the kids eyes. Luckily it’s super simple and they love it. We’ll even add in some chocolate chips as a surprise. If you’re really adventurous, you could make up some rainbow pancakes with all the colors of the rainbow. We’ve done this in the past and just use condiment containers (found at the dollar store) to squeeze out the color of batter we were on next. It make for a less messy approach.
And lately every year we’ll whip up some delicious St Patrick’s Day Sherbet Floats! This is just your basic Lemon-Lime Soda, Lime Sherbet, Whipped Cream with sprinkles on top! As you can see from this list I like to keep things simple but honestly it doesn’t change how much the kids love it! I bet you could just pick one to surprise the kids with and they’d be over the moon!

How are you handling the cold this winter? It seems like it’s been cold for so long and if it’s going to be cold, I believe there needs to be snow, am I right? Well we’re making it through this winter with these yummy soups my family has been enjoying! Soup is definitely a go to when it’s chilly outside or when we’re looking for something light. So here are 5 yummy soup recipes you can try over the next couple months.
Cinnamon rolls on Christmas morning is one of my favorite traditions! But I’m not the mom wanting to spend hours in the kitchen so finding this amazing recipe that’s quick and easy was just what I needed to carry the tradition on! This recipe was given to me by a friend when I was explaining my problem of not wanting to be in the kitchen all day. We’ve now made these cinnamon rolls multiple times for different holidays, family get together and just to give out to neighbors. I’m sure you’re going to enjoy these just as much as we do!
One Hour Cinnamon Rolls
3 1/2 cups warm water
3/4 cups sugar
1/2 cup oil
6 Tbsp yeast
Combine these together and let sit (I cover mine so the yeast will activate) for about 15 minutes. Then add in:
1 Tbsp Salt
3 Eggs
10 1/2 cups flour
Mix together for 10 minutes and then let rest for 10 minutes. (if it’s still really sticky, mix for a minute longer) After it’s rested for 10 minutes place some oil on the counter (yes oil not flour) and roll out your dough. You’ll want to divide your dough in half and press half of it into a rectangle shape. Spread out 1/4 cup of melted butter. Then in a bowl mix together 1 cup brown sugar and 1 tbsp cinnamon. Once mixed well sprinkle over the butter. Roll up tight but not too tight. Take a bread knife (one with a serrated edge) and cute into 12 even slices and place on a greased sheet. Repeat with other half of dough. Let rise (timing depends on the temp in your kitchen but you want them to be large in size) After, bake at 400 degrees for 12-15 minutes. To make your frosting combine:
1 cube butter
2 dashes of salt
2 tsp vanilla
6 cups powdered sugar
You’ll want to add these to your rolls when they’re still warm but not right out of the oven, let them sit for a minute or two before adding your frosting. Then, enjoy!
Just a side note, these make 24 LARGE rolls! I usually half this recipe when making it just for my family unless we’re planning on sharing in quick case I’ll make the full recipe!
My kids found a recipe for Vanilla Steamers and begged to make it. I agreed and they started to make it. The outcome was actually really good. It’s a good change from the traditional hot chocolate. The weather is cold outside which means it’s soup season! I honestly could have soup all year round but my family has other ideas. So while I hold off the rest of the year, winter is fair game! I’ve put together some of my favorites and ones my family enjoys too!

I think I might add this tomato soup to go along with our grilled cheese! It’s so easy, you just put some sour cream in a bag with a little milk to thin it up a bit. Then draw circles in your soup. After words you just take a toothpick and run it out to create the lines!

The weather took a drastic drop here in Utah which means its soup weather! This is my favorite time of the year, I love the cooler weather and especially soups. My family might not agree completely with me but I’ve won them over with our Go To Creamy Chicken Enchilada Soup! The best part about this soup is it made up of things I usually have on hand and in my pantry and it’s a simple, easy dump soup that doesn’t take much effort or prep at all! I know you’re going to love it just as much as we do.
Creamy Chicken Enchilada Soup
1 8oz package of cream cheese
1 small can chicken broth (I end up adding more)
Chicken (I love using a rotisserie chicken)
1 can of corn
1 cup instant white rice
1 large can of green enchilada sauce
First you’ll add the cream cheese and chicken broth to your pot and stir until the cream cheese has melted. Then add in your remaining ingredients. (Add the rice in uncooked) Stir and let simmer for about 10 minutes until the rice has become softened. Serve with tortilla chips and cheese.
I absolutely LOVE the Fall season. Pumpkins, pumpkin spice, pumpkin cake, what’s not to love? One of our favorite recipes for the Fall is pumpkin sheet cake. It’s super easy to make and it feeds a lot of people. My kids even request this over and over again. It’s definitely a crowd pleaser. YUM!

And with the super cold temperatures coming up I thought it was fitting to share our favorite and SUPER EASY recipe with you. Plus when it’s a special occasion like today, I’ll snag soup bowls to put it in which my kids love (and I’ll admit, I love it too!). Enjoy!
Jody’s Chili
2 Chili Mild Seasoning Packets
1 Big Can Diced Tomatoes
1 Big Can Tomato Sauce
2 Cans Black Beans
2 Cans Pinto Beans
2 Cans White Beans
1 Pound Hamburger
Simple brown your hamburger and combine everything in your pot (we’ll even throw it all in the crock pot before we head out too). Warm and serve with sour cream and shredded cheese.
