10 Easy Rotisserie Chicken Dinner Ideas!

I love snagging one of those yummy Rotisserie Chickens when I go to Sam’s Club or Costco (yes I have memberships to both 🙂 ). There are so many yummy things you can make with them and it’s easy enough to pull the chicken right off while they’re still warm. I’ll often pull the chicken off and put it in a ziplock bag for easy lunch or dinner meals. We even love it on our pizza! So here are 10 different meal ideas you could create with a rotisserie chicken!

  1. Rotisserie Chicken Tacos – make it easy to put your street tacos in a 9×13 and add your lettuce and cheese and melt in the oven real quick.
  2. Alfredo Chicken over Spaghetti – I linked you to my favorite Alfredo sauce then I just add my chicken and cook the noodles.
  3. Chicken Bacon Quesadilla – Simple, easy and the kids love it
  4. BBQ Chicken Pizza – add some red onions if you desire and any other favorite toppings. (We love using alfrado sauce as well on our pizza)
  5. Chicken Pot Pie – going back to the roots with this one, definitely grew up with lots of chicken pot pie!
  6. Chicken Noodle Soup – you could even have this simmering in the crock pot through the day to soften your veggies and make for a quick dinner
  7. Creamy Chicken Enchilada Soup –  a family favorite right here and it’s even yummier when you use a rotisserie chicken
  8. Honey Lime Chicken Burritos – it’s almost like you’re eating at Costa Vida!
  9. Fiesta Chicken Casserole – this one is so so easy!
  10. Chicken Taco Salad – this is simple to throw together you just need lettuce, black beans, corn, fresh diced tomatoes, shredded cheddar cheese, shredded chicken and your choice of dressing. ( I usually just go with ranch)

Our 3 Favorite (And Incredibly Easy) Treats to Make on St. Patrick’s Day!

I love making the day fun when a holiday comes by and St. Patrick’s is no different. So I wanted to share our 3 favorites things we like to make on St. Patrick’s Day as a special treat!

First is the traditional Rice Krispies but with a twist. Instead of your usually Rice Krispy cereal, we swap them out with lucky charms. They are the perfect match to adding that St Patrick’s vibe to our treat. Plus you can’t get any easier than making Rice Krispies, they whip together in less than 10 minutes. All you need is butter, mini marshmallows and your cereal. That’s it! If you’ve never made homemade Rice Krispies Treats before it’s simple. Melt 4 tablespoons of butter over the stove top. Once melted add in 5 cups of mini marshmallows and stir continually until melts. Then dump in 6 cups of your cereal and fold until it’s all be mixed together. We then use a 9×13 (greased) and press them inside. That’s it! Simple and the kids will love helping!

One of the other things we do every year is make green pancakes! It just makes dinner (yes breakfast for dinner is the BEST!) a step up in the kids eyes. Luckily it’s super simple and they love it. We’ll even add in some chocolate chips as a surprise. If you’re really adventurous, you could make up some rainbow pancakes with all the colors of the rainbow. We’ve done this in the past and just use condiment containers (found at the dollar store) to squeeze out the color of batter we were on next. It make for a less messy approach.

And lately every year we’ll whip up some delicious St Patrick’s Day Sherbet Floats! This is just your basic Lemon-Lime Soda, Lime Sherbet, Whipped Cream with sprinkles on top! As you can see from this list I like to keep things simple but honestly it doesn’t change how much the kids love it! I bet you could just pick one to surprise the kids with and they’d be over the moon!

Easy to Make High Protein Energy Bites Recipe

Are you looking for more protein in your diet? We sure are! My kids are hungry all of the time. We decided to add more protein in our daily eating and it makes such a difference. I found these super yummy high protein energy balls that my kids absolutely love. You can add them to lunches or have them for after school snacks.

THE BEST ENERGY BITES
By Mel’s Kitchen Cafe ( you can check all of her notes here on her site!)

INGREDIENTS

  •  1 cup (3.5 ounces) old-fashioned oats
  •  1/3 cup (1.25 ounces) ground flaxseed meal
  •  2/3 to 1 cup (6-9 ounces) nut butter (see note)
  •  1/4 cup (3 ounces) honey
  •  Dash of vanilla extract
  •  Pinch of salt (more to taste, if needed)
  •  Add-ins: mini chocolate chips, shredded coconut, chopped nuts, dried fruit, chia seeds, etc.

INSTRUCTIONS

  1. In a food processor, add the oats and process until coarsely chopped. If you don’t have a food processor coarsely chop the oats in a blender and add to a bowl.
  2. Add the flaxseed meal, nut butter, honey, vanilla and salt. Process/mix until the mixture comes together into a soft but not overly sticky ball.
  3. If the mixture is overly dry, add nut butter a tablespoon at a time and process/mix until the consistency is soft but not overly sticky or crumbly.
  4. Remove the blade from the food processor, if using. Add any add-in ingredients, and mix with your hands until evenly combined.
  5. Roll the dough into small balls (I use my small cookie scoop – #60) and place on a parchment-lined baking sheet or tray. Refrigerate until firm enough to stack in a lidded container or in a bag. The energy bites can be frozen for several months or refrigerated for a week or so.

The BEST and EASIEST Cinnamon Roll Recipe For Christmas Morning!

Cinnamon rolls on Christmas morning is one of my favorite traditions! But I’m not the mom wanting to spend hours in the kitchen so finding this amazing recipe that’s quick and easy was just what I needed to carry the tradition on! This recipe was given to me by a friend when I was explaining my problem of not wanting to be in the kitchen all day. We’ve now made these cinnamon rolls multiple times for different holidays, family get together and just to give out to neighbors. I’m sure you’re going to enjoy these just as much as we do!

One Hour Cinnamon Rolls
3 1/2 cups warm water
3/4 cups sugar
1/2 cup oil
6 Tbsp yeast

Combine these together and let sit (I cover mine so the yeast will activate) for about 15 minutes. Then add in:

1 Tbsp Salt
3 Eggs
10 1/2 cups flour

Mix together for 10 minutes and then let rest for 10 minutes. (if it’s still really sticky, mix for a minute longer)  After it’s rested for 10 minutes place some oil on the counter (yes oil not flour) and roll out your dough. You’ll want to divide your dough in half and press half of it into a rectangle shape. Spread out 1/4 cup of melted butter. Then in a bowl mix together 1 cup brown sugar and 1 tbsp cinnamon. Once mixed well sprinkle over the butter. Roll up tight but not too tight. Take a bread knife (one with a serrated edge) and cute into 12 even slices and place on a greased sheet. Repeat with other half of dough. Let rise (timing depends on the temp in your kitchen but you want them to be large in size) After, bake at 400 degrees for 12-15 minutes. To make your frosting combine:

1 cube butter
2 dashes of salt
2 tsp vanilla
6 cups powdered sugar

You’ll want to add these to your rolls when they’re still warm but not right out of the oven, let them sit for a minute or two before adding your frosting. Then, enjoy!

Just a side note, these make 24 LARGE rolls! I usually half this recipe when making it just for my family unless we’re planning on sharing in quick case I’ll make the full recipe!

Candy Cane Cookie Recipe

Have you ever made these cookies before? If not, you should totally do it this year with your kiddos or friends! Each Christmas season, my mom would make these with my sisters and myself. It’s a fun memory. They are super easy and kid friendly. Give them a try!

Candy Cane Cookie Recipe
Recipe & Picture by Princess Pinky Girl

Ingredients

  • 1 cup unsalted butter (softened)
  • cup granulated sugar
  • ½ teaspoon cream of tartar
  • 1 ½ teaspoons pure peppermint extract
  • 1 ¼ teaspoons clear vanilla flavoring
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon red squeeze gel color

Instructions

  1. Using a stand mixer, or a handheld mixer and a large mixing bowl, on medium-high speed, cream the unsalted butter for 1 ½ to 2 minutes.
  2. Reduce the mixing speed to low, and add the granulated sugar, cream of tartar. Increase the mixing speed to medium and continue to mix for 2 to 3 minutes or until the shortening mixture is fluffy.
  3. Reduce the mixing speed to low and add the peppermint extract and clear vanilla flavoring.
  4. Keeping the mixer speed low, slowly add the baking powder and all-purpose flour a ½ cup at a time. Continue mixing just until the flour is well incorporated and no visible streaks of flour are showing.
  5. Divide the cookie dough into 2 equal dough balls. Return 1 dough ball to the mixing bowl to be colored red. Cover the dough ball that is to be the white part of the candy cane cookie and place it in the refrigerator.
  6. Add the ½ teaspoons red gel color to the dough that is left in the mixing bowl. Using the mixer on low speed, add the red coloring into the dough until it has a uniform color and no white streaks are visible. Place the red dough in a medium-size bowl and cover the red dough and refrigerate for 1 hour.
  7. Just before removing the dough from the refrigerator, preheat the oven to 350* and line a baking sheet with parchment paper.
  8. Using a ½ tablespoon measuring spoon, scoop out the white and red dough balls. Roll each into a tight round ball, to make sure the dough rope holds its shape.
  9. Cover your counter or a cutting board with a sheet of parchment paper. (This is to keep from staining the counter or cutting board red) Use your hand to roll the white and red dough balls into 5 inch long ropes. It is very important that your hands stay cool while you are rolling the ropes.
  10. Lightly press the bottoms of the 2 ropes together. Carefully and with light pressure, twist the ropes together. Be sure to keep the ropes rounded and do not flatten them out.
  11. Place the twisted rope onto the prepared baking sheet and curve the rope tops into the candy cane crook. Repeat the dough ball and twisting process with the remaining dough. Place the cookies 2 inches apart.
  12. Bake for 7 minutes.
  13. Allow the cookies to cool on the pan for 10 minutes before moving them to a cooling rack. Store in an airtight container.

5 Soups You’ll Love This Winter!

The weather is cold outside which means it’s soup season! I honestly could have soup all year round but my family has other ideas. So while I hold off the rest of the year, winter is fair game! I’ve put together some of my favorites and ones my family enjoys too!

  1. Creamy Sausage Tortellini Soup – I found this recipe from a neighbor who brought dinner over one night and it quickly became one of my favorites. We love getting our tortellini’s at Sam’s Club and using them on other easy meals the rest of the week.
  2. Copy-Cat Zupas Wisconsin Cauliflower Soup – if you’ve ever been there, you know just how yummy this soup is. It’s one my daughter asks for often in our house.
  3. Green Enchilada Chicken Soup – this one is heavenly but I’ll warn you, lately it’s been hard getting our hands on green enchilada sauce. So if you come across some, grab it!
  4. Loaded Baked Potato Soup – I’m not a big fan of baked potatoes but put it in a soup and I’ll be there!
  5. Roasted Red Pepper Tomato Soup with Chicken – guys, this is the easiest and yummiest soup! Everyone enjoys this one and it’s so simple. All I do is get Pacific Foods Roasted Red Pepper and Tomato Soup from the store, add in some chicken (rotisserie chicken works great) and heat it up. You can top it with cheese and my kids love eating it with tortilla chips.
