A PYP Best Blog! Recipe: Making Fruit Pizza!

Just in case you missed this DIY article on making fruit pizza with a new kind of crust the first time we shared it a couple of years ago, we are republishing it. After Marne wrote this blog originally, we got an awesome response.  This is such a tasty recipe, we are sure you’ll love it as much as we do! This is one of the PYP Best Blogs!

 

I don’t know many people that don’t like fruit pizza. But I have to share my recipe with you today! I don’t use the normal sugar cookie base. Mine is an oatmeal cookie base instead! And let me tell you…it is SO good. I like it so much better than the sugar cookie fruit pizzas. This has become a staple at our family reunions now too!

Crust (oatmeal cookie dough)
1 cup butter
1 cup firmly packed brown sugar
½ c granulated sugar
2 eggs
1 tsp vanilla
1½ c flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
3 cups oatmeal

Heat oven to 350. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add flour, baking soda, cinnamon, and salt; mix well. Stir in oatmeal. Spread dough onto pizza round about 1/4 of an inch thick and bake 15-20 minutes (depends on pan, thickness, etc….check middle to see if it is still doughy). Cool completely before topping with “sauce.”

Fruit Pizza “Sauce”
one pint whipping cream
1 tsp vanilla (almond extract tastes great too!)
½ cup powdered sugar
3 or 4 oz pkg of cream cheese

Whip the cream until stiff (but not buttery) and add vanilla. Soften cream cheese and whip with powdered sugar, then fold into whipped cream. Top oatmeal crust and coat completely (you will most likely have some left over).

Now top your pizza with your choice of fruit toppings! We love strawberries, bananas, blueberries, kiwi fruit, grapes, and oranges. Enjoy!

Yesterday was National Tooth Fairy Day.  It got me thinking…. what do you do when the tooth fairy comes?

I wondered where the story of the Tooth Fairy came from.  This is what I found:

” For hundreds of years, mystical legends, stories, and traditions have been shared about the loss of baby teeth. In some cultures, children’s teeth were buried in order to hide them from witches and evil spirits who would use the tooth’s powers for voodoo. The Vikings believed that children’s teeth had a magical power in them that would help them fight in battle. They would even pay their children for their lost baby teeth so that they could be used to string onto battle necklaces and other jewelry.

Over time, people began to share stories about a Tooth Mouse who would scamper around town and steal children’s teeth in the middle of the night. This story of the mouse soon transformed into the story of the Tooth Fairy, who would leave treasures under the children’s pillows in exchange for their lost teeth.

The traditions and legend of the Tooth Fairy are still practiced today all around the world. It is considered a useful practice by many parents because it gives their children something to look forward to when they lose their teeth. And so year after year, baby teeth are placed under children’s pillows at night in hopes of waking up to a wonderful surprise from none other than the Tooth Fairy!”

When my daughter lost her first tooth, she was so scared of the thought of the Tooth Fairy.  She didn’t want the Tooth Fairy coming into her room.  So began the tradition in our home that the tooth be left in an envelope on the bedroom door, and that is where the tooth fairy leaves the money at our house.

A PYP Best Blog! What can you expect from a cut of beef?

Just in case you missed this article on what you can expect from a cut of beef the first time we shared it a couple of years ago, we are republishing it. After I wrote this blog originally, we got an awesome response. This is one of the PYP Best Blogs!

Ever wondered what the differences are in your cut of beef?

I want to thank the meat department manager at my local grocery store for providing great information on buying beef.

  • Middle meats like Top sirloin, T-bone, bone in rib steak, Tenderloin, Tri-tip, New York, ribeye will be your most tender cuts.
  • Steaks such as Petite sirloin are a good low cost steak, good flavor not overly tough.
  • Steaks such as Eye of round, bottom round and tip steaks will be tougher.
  • Flank and skirt steaks are great when grilled, skirt makes wonderful fajita meat.
  • Cross rib roast and chuck roast are best for pot roast application, remember that a bone in chuck will have more flavor and that a cross rib if the bone was still in would be a round bone roast.
  • Rump roast, eye round roast, sirloin tip roast petite sirloin roast are all oven roast.
  • All roasts will come out very nice in a crock pot.
  • Ground beef is pretty straight forward, just remember that the higher the number the less fat that is in the ground beef.

Here are some tips on what to except when you buy pork:

  • Boneless pork loin chops, pork rib chops, center cut loin chops, sirloin end chops and boneless sirloin chops will all be nice and tender.
  • Boneless ribs, country style ribs and Slab ribs are overlooked for great meals. All work well in a crock pot, slab ribs on the grill will be very tender and have a wonderful flavor, just remember to cook low and slow.
  • Pork roasts;
    Boston butt roast is a fatty roast works well in the oven, crock pot or a smoker. Boneless loin and crown rib roast are all ways a great meal, cook in the oven at a lower temp for best results. Bone in and boneless sirloin roast are very good oven roast.
  • Ground pork is all ways a great item to use in place of ground beef. Another one to use is ground Chicken this has a nice buttery flavor and makes wonderful tacos.

Freezing Summer Produce

It’s that time of the year where the fresh produce is going to be in abundance for much of the United States. I love this time of year!  Yes, I love when my neighbors bring me a zucchini or three! I love the summer produce so much that I need to put my freezer to work and start storing the summer produce for fresh tasting fruits and vegetables during the winter months! Be sure to keep up with your local Grocery Store Sales,Farmers Markets, Roadside Stands, Neighbor’s Gardens or even your own.

Here are some popular items you may like to keep all year long and how you can preserve them.

BANANAS 

If your family has a love for bananas purchasing at the lowest price allows you to stock up. However, it can be a little tricky to store the soft fruit. One option is to dehydrate and create banana chips. Another option is to freeze bananas. Cut them up or freeze them whole on a cookie sheet and then transfer them to a freezer bag.  They are yummy when eaten frozen right out of the bag, used in cookies or bread and even thrown into a smoothie!  Here is a post we did a couple or years ago about making guilt free ice cream!

CORN 

YUM, fresh corn on the cob! This is the food many think of when you think of summer. You can savor the taste of fresh sweet corn by freezing and the price is amazing! Here’s a great how to from the Utah State University Extension on freezing corn.

HERBS

Herbs have a short shelf life in the fridge so drying them out in the oven allows you to have fresh herbs all year round. To dry herbs in the oven place the oven on 180 degrees. On a cookie sheet lay out your herbs making sure they aren’t overlapping. Allow the herbs to dry for 3-4 hours, turning every hour.

If you have patience and time, you can air dry your herbs. Simply tie up a few stems on the ends and hang upside down…be sure to avoid direct sunlight. When the leaves of the herbs are completely dry they will flake or crumble off very easily.  Simply store in an airtight container for best results.

ZUCCHINI

I know, I know! You get so sick of zucchini, but in December you might have a craving! Pick Your Own is a great resource for learning how to freeze all your summer squashes!  I love this spiral cutter, perfect for making noodles from squash.

PEACHES 

 When fruits and veggies go out of season they become expensive and peaches are one of them! To enjoy peaches year round be sure to freeze your own and save yourself some money this winter.

ONIONS & PEPPERS

Onions and Peppers are probably one of the easiest veggies to freeze. You literally slice or dice them up and stick in the freezer safe container or baggie.  Just portion them to your families needs so when you make fajitas, omelets or breakfast potatoes consider mixing a bag of green peppers and onions for ease!

 PINEAPPLE 

 Do you love Smoothies? Pineapple is super easy to freeze. You simply core and dice the pineapple into chunks, lay them out on a cookie sheet and allow to flash freeze in the freezer before placing in a freezer appropriate bag to store long term.

Quick Tip: 

When freezing make sure produce is completely dry or they’ll be mushy when they thaw.
