I tend to be the person that is asked to make cookies for EVERYTHING! I have a super yummy cookie recipe that is almost TOP Secret! I might share it with you tomorrow. It seems like a I am always super busy and making cookies seems to take so much time! I have resorted to making cookie bars more often than cookies. They taste great and the time savings is great.
Every once in a while I will cheat and use a cookie mix. My favorite cookie mix for making cookie bars is the Krusteaz Sugar Cookie Mix. I use 2 or 3 mixes for a big jelly roll sheet.
Here are some cookie bar recipes that some of our great PYP members have shared:
Butterscotch Cookie Bars
1/2 c butter (1 cube)
1 1/2 c graham cracker crumbs
1 c chopped walnuts
1 can sweetened condensed milk
1 c chocolate chips
1 c butterscotch chips
1 1/3 c coconut
Melt butter in 9×13 pan. Layer ingredients in order listed. Heat milk (it will pour easier). Bake at 350 degrees for 25 minutes.
Magic Cookie Bars -(These are my families favorite)
1/2 cup(1stick) butter or margarine
1/2 cups Graham cracker crumbs
1 can (14oz) sweetened condensed milk (NOT evaporated milk)
2 cups (12oz) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped walnuts
Preheat oven to 350 degrees (325 for glass dish). In 13 X 9 inch baking pan, melt butter in oven.
Sprinkle graham cracker crumbs over butter; pour condensed milk evenly over crumbs. Top with remaining ingredients; press down firmly with fork.
Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store at room temperature.
Raspberry Cookie Bars
1 package (18 ounces) refrigerated sugar cookie dough, softened (recommend Pillsbury)
3/4 teaspoon lemon extract
1/2 cup seedless raspberry jam
1/4 cup chopped pecans ( sometimes I use walnuts_
Preheat oven to 350 degrees
Line an 8 inch square glass baking dish with enough foil so there is a overhang on 2 sides. Mix cookie dough with lemon extract, kneading to combine. With damp fingers, press 2/3 of dough into the bottom of prepared baking dish. Spread jam over dough. Crumble remaining dough evenly over top of jam. Scatter pecans over top. Bake for 30 to 35 minutes or until browned around edges and cooked through in center. Let cool in pan. Lift
edges to remove bars. Cut into 2 inch squares or diagonally into pennant shapes.
