DIY Rainbow Cake & Frosting

There are lots of different recipes online for rainbow cakes. Have you seen those ones that are 8 layers tall? They are amazing! (I have actually made that 8 layer cake before, they are easy just time consuming). My youngest just turned 4 this past week and she wanted a rainbow cake. I wanted to do something faster and simpler this time around, so this is what I came up with:

So cute, right? All I did was put Skittles on the cake for the rainbow, then mini marshmallows at the bottoms of the rainbow! So simple. I tinted the frosting a light blue to resemble the sky (using homemade frosting, of course). I used a rainbow chip cake mix for the cake itself. My daughter LOVED it! This type of cake would be perfect for even a summer BBQ or with your family for a summer dessert. I hope you like it as much as we did!


Here is my favorite recipe for homemade frosting:

1/2 cup butter (1 stick), softened
4-1/2 cups powdered sugar
1-1/2 tsp vanilla extract
5 Tbl milk

In a large bowl, cream butter until light and fluffy with a hand mixer. Then beat in the powdered sugar, vanilla and enough milk to achieve desired consistency.
