Freezer Meals part 2 Recipes

Several people wanted my recipes but I wasn’t sure what to post. I use and have over 100 freezer meal recipes. I will try to just post a few a week.

Usually for Breakfasts for freezer cooking I make big batches of things like muffins, pancakes, smoothies. The key is to flash freeze. I will make pancakes, place them on a cookie sheet in one layer in the freezer. Once frozen I will stack and place in a gallon size freezer bag. This way they don’t stick to eachother. Makes it easier when taking out a few at a time to throw in the microwave. Muffins, you can do this way too. For the smoothies I usually buy fresh fruit and freeze. When Aldi has whole pineapples on sale for $.99 I buy 4-5 of them then make chunk size pieces and freeze on a cookie sheet. This again keeps the fruit from freezing stuck together. We use this method for strawberries, watermelon in balls, grapes, cantaloupe, etc. Then we throw them in a blender with yogurt, a banana and some skim milk. Great quick breakfast.

We also do biscuits ahead of time. Our favorite recipe is Sky-High Biscuits. You make them, cut them out then freeze and place in freezer bag. Great time saver too.

  • 3 c. flour
  • 3/4 c. butter flavored shortening
  • 4 1/2 tsp. baking powder
  • 1 c. milk
  • 2 tsp. salt
  • 1 egg
  • 1 Tbsp. sugar

Mix dry ingredients; cut in shortening. Mix in milk and egg. Press our with fingers, not too thin. Cut out and freeze. When ready to use, bake at 425 for about 15 min. or until golden brown.  We usually triple this recipe to make enough for the month.
