Fresh baked breakfast on busy mornings!

My sweet neighbor friend recently brought over a dozen delicious homemade muffins.
But they weren’t warm from the oven and tucked into a sweet gift basket.
Even better!!!!

They were uncooked, frozen, in a freezer bag, with baking instructions written on it so that we could enjoy them hot from the oven at our leisure.
Brilliant!
I used them for our family’s breakfast on two different days.
Such a treat for them to get freshly baked muffins for breakfast rather than reheated ones.
I think this would work wonderfully well with any muffin recipe.
Just make up the batter, fill paper lined muffin cups according to your recipe directions and then place the muffin tins in the freezer. When they’re frozen solid, pop them out of the tin, place them in a freezer bag with baking instructions. Add 2 minutes to the recipe’s suggested baking time. Store them in your freezer until you’re ready for them. Then just put the frozen muffin batter back into your muffin tin to bake them.
Voila!
Fresh baked muffins even on busy mornings.
And you can bake only as many as you need at a time. You don’t have to bake two dozen muffins at once and then have them sitting around calling out to you all day long. Or is that just me???
