Another great mix to make from scratch is PANCAKE MIX. Pancakes are an easy morning meal and much less expensive than cold cereal. Here’s my recipe:

8 C flour
1/2 C Baking Powder
1 T Baking Soda
1 1/2 C Sugar
1 T Salt
(optional: 2 2/3 C Powdered Milk)

To Use:

Combine 1 C mix with 1 egg, 2 T oil, 1 C milk (I like to write this on the container in permanent marker)

Note: If you use powdered milk in the mix, you add 1 C water instead of 1 C milk when making the recipe.

Need an easy summer dessert? It’s true you have to turn on the oven for this one…but trust me…its FAST and delicious! This recipe is always a winner. These lemon bars have more of a cakey texture than the traditional lemon bars. I like them so much better!

Summer Lemon Bars

1 angel food cake mix
1 can lemon pie filling

Mix both together, just until moistened. Be careful not to overmix. Pour into a greased 9×13 pan. Bake at 350 degrees for 22-25 minutes or until light golden brown on top. Cool for 10 minutes on a wire rack, then sprinkle with powdered sugar.
