Guilt Free Double Chocolate Muffins


I love baking and my kids love to eat what ever comes out of the oven. So once in a while, when we are trying to be careful about what we eat, I try to sneak in a healthy treat. I will admit this is not always a successful venture. Their taste buds can sense the lack of sugar in a nano second and they quickly spit out the baked sugarless creation and disappear from sight. Leaving me with a countertop of healthy baked goods now declared “no man’s land.” A desolate space no one will touch until all signs of the recent sugar free intruder have disappeared. Once the word has spread, certain sugar free baked goods could sit there for days and no one would be tempted to try one again. I’m pretty sure this is how they protest my efforts to guide us towards a healthier way of eating.

When I found a recipe for a healthier version of a double chocolate muffins with chocolate chips, I was a little leery of how it would be received. To my surprise this double chocolate muffin was quickly gobbled down by the entire clan. My little boys were even calling them cupcakes. They even asked me to make them again! So I thought I pass this recipe along to you.

Ingredients:
1 3/4 c oats
 3 egg whites
 3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 tsp. vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1/4 tsp. salt
1 cup hot water
1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
1/2 cup semi-sweet chocolate chips (or switch it up with any kind of chip you’d like.)

Preheat the oven to 350 degrees.
Line a muffin pan with foil or paper liners.
In a blender combined all the ingredients until oats are smooth.
Place the mixture in a bowl and gently fold in half of the chocolate chips.
Divide into prepared muffin tins. (batter will be loose)
Place muffins in the oven for 10 mins and then pull them out of the oven.
Top with remaining chocolate chips and place back in the oven for another 10 minutes.
Test with a toothpick and remove when the toothpick comes out clean.

Quick and Easy Banana Bread

My family LOVES banana bread.

I hate making banana bread.

I can’t tell you how many black bananas I’ve thrown away because I just swore I was going to get around to it – eventually.  I’ve even put them in the freezer to save for later, then I eventually throw away the freezer burned bananas, too.

So when I started seeing this recipe for banana bread pop up all over Pinterest, I knew I had to give it a try.

Ingredients

1 Yellow Cake Mix

3-4 very ripe Bananas (I used 4)

2 Eggs

Chocolate Chips (optional)

Preheat oven to 350*.  Prepare 2 regular or one large loaf pan(s) by spraying WELL with cooking spray (or by greasing and flouring.  Do people still do that?)

Peel the bananas and throw them all in a big bowl; use your mixer to mash them all up.

Now just dump in the cake mix and the eggs, and mix well.  Then stir in the chocolate chips.  The recipe calls for 1/2 cup to 1 cup.  (I am lazy, so I just threw in the whole bag.   I thought that was a little too chocolately and would only use 1/2 bag next time.)

Pour into the prepared loaf pans

and bake for 35-40 minutes (mine took 45.  It will also take longer if you are doing one big pan).  Remove from the oven and let cool slightly, then turn out onto a cooling rack to finish cooling.

Uh…I told you to spray the pan well…

It was DELICIOUS.  I will never make regular banana bread (or waste all those bananas!) again!

Recipe: Fruit Pizza

I don’t know many people that don’t like fruit pizza. But I have to share my recipe with you today! I don’t use the normal sugar cookie base. Mine is an oatmeal cookie base instead! And let me tell you…it is SO good. I like it so much better than the sugar cookie fruit pizzas. This has become a staple at our family reunions now too!

Crust (oatmeal cookie dough)
1 cup butter
1 cup firmly packed brown sugar
½ c granulated sugar
2 eggs
1 tsp vanilla
1½ c flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
3 cups oatmeal

Heat oven to 350. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add flour, baking soda, cinnamon, and salt; mix well. Stir in oatmeal. Spread dough onto pizza round about 1/4 of an inch thick and bake 15-20 minutes (depends on pan, thickness, etc….check middle to see if it is still doughy). Cool completely before topping with “sauce.”

Fruit Pizza “Sauce”
one pint whipping cream
1 tsp vanilla (almond extract tastes great too!)
½ cup powdered sugar
3 or 4 oz pkg of cream cheese

Whip the cream until stiff (but not buttery) and add vanilla. Soften cream cheese and whip with powdered sugar, then fold into whipped cream. Top oatmeal crust and coat completely (you will most likely have some left over).

Now top your pizza with your choice of fruit toppings! We love strawberries, bananas, blueberries, kiwi fruit, grapes, and oranges. Enjoy!
