Recipe: Homemade Chicken Noodle Soup

January is national soup month! Each week I have been posting a new soup recipe for you to try. This recipe is a family favorite! My mom’s recipe for homemade chicken noodle soup. I hope you love it as much as we do!



Homemade Chicken Noodle Soup
1 lb. chicken tenders or about 2 large chicken breasts (depending on how much chicken you like)
3/4 pkg. Country Noodles, more or less (found at Walmart, Costco)
1 lg. onion, chopped
4 stalks celery, chopped
2 tsp. each of onion and celery salts (can use more bouillon if don’t have these)
2 cups chopped or grated carrots
about 3 quarts of water
3 Tbsp. instant chicken bouillon

Sauce
1/2 cup butter (no margarine)
3/4 cup flour
1 quart milk
Bring sauce to boil. Boil about 2 minutes, stirring constantly. Add to soup mixture. (Cook this right before adding it to the soup mixture, see below).

Chop onion, celery, carrots and add to water, bouillon and salts. Put into a large crock pot (this recipe fills my 8 qt crock pot) with the frozen chicken and cook on low for several hours. Your house will smell fantastic! About 1 hour before eating time, add the cooked sauce and noodles. Simmer until noodles are done. Amount of noodles is personal preference.
