Chinese New Year Recipes

 

Yesterday I talked about Chinese New Year and how my family loves to celebrate Chinese New Year and learn about the new year and the animal of that year. I told you that I am pretty sure one of the reason my family likes it is because they like the food we eat when we celebrate Chinese New Year. Tomorrow, Thursday, February 19th is the first day of the Chinese New Year. Do you have plans to celebrate? How about cooking some of that great food? Here are two of the easier Chinese New Year recipes I have that will let you make some yummy food to celebrate Chinese New Year with your family. One has a couple of uncommon ingredients and the other has things many people already have in their kitchens. Let us know if you try these recipes. We love to hear from you!

 

Chinese New Year Recipes – Beef and Broccoli

Makes 4 servings

1/3 cup oyster sauce
2 teaspoons toasted sesame oil
1/3 cup apple cider
1 teaspoon soy sauce
1 teaspoon white sugar
1 teaspoon cornstarch
3/4 pound beef round steak, cut into 1/8-inch thick strips
3 tablespoons vegetable oil, plus more if needed
1 thin slice of fresh ginger root
1 clove garlic, peeled and smashed
1 pound broccoli, cut into florets

 

Directions:
1. Whisk together the oyster sauce, sesame oil, apple cider, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. Place the steak pieces into a shallow bowl, pour the oyster sauce mixture over the meat, stir to coat well, and marinate for at least 30 minutes in refrigerator.
2. Heat vegetable oil in a large skillet over medium-high heat, and stir in the ginger and garlic. Let them sizzle in the hot oil for about 1 minute to flavor the oil, then remove and discard. Stir in the broccoli, and toss and stir in the hot oil until bright green and almost tender, 5 to 7 minutes. Remove the broccoli from the skillet, and set aside.
3. Pour a little more oil into the skillet, if needed, and stir and toss the beef with the marinade until the sauce forms a glaze on the beef, and the meat is no longer pink, about 5 minutes. Return the cooked broccoli to the skillet, and stir until the meat and broccoli are heated through, about 3 minutes.

 

Chinese New Year Recipes – Sweet and Sour Chicken 

Makes 8 servings

1 8 ounce can pineapple chunks, drained – save the juice
1/4 cup cornstarch
1 3/4 cups water, divided
3/4 cup white sugar
1/2 cup distilled white vinegar
2 drops orange food coloring
8 skinless, boneless chicken breast halves – cut into 1 inch cubes
2 1/4 cups self-rising flour
2 tablespoons vegetable oil
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 egg
1 1/2 cups water
1 quart vegetable oil to use for frying
2 green bell peppers, cut into 1 inch pieces

Directions:
1. In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Bring to a boil. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
2. Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
3. Heat oil in skillet to 360 degrees F. Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper towels.
4. When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

 

Cauliflower Recipes – Yummy!

In the quest to eat healthier I’ve been looking at ways to add more vegetables and reduce the breads and carbs my family eats. I’ve been fascinated with all of the talk about cauliflower and how people are using it instead of potatoes or crusts. For years I have heard of having mashed cauliflower instead of mashed potatoes. I have even had it a few times. I thought it was pretty good but I never really thought about branching out and finding more recipes. I recently decided to do just that and I so far I have found a few winners. My whole family, even the picky eaters, loved these recipes!

 

Loaded Cauliflower

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container sliced mushrooms
Directions:
– Preheat oven to 425°
– In a large pot boil water and cook Cauliflower for 8 – 10 minutes, drain and let cool.
– In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3tbs chives, 1 cups of cheese, mushrooms and cauliflower and mix well.
– Place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles.
– Bake for 15-20 minutes until cheese is melted. Top with remaining 3Tbs chives and serve.

 

 

Cauliflower Pizza

Ingredients:

1/2 Head of cauliflower (mine was a smallish head)
2 C shredded cheese divided (I used mozzarella, but any medium/hard cheese will work)
Italian seasonings (I used oregano, parsley, fresh garlic and some onion)
Pizza sauce or marinara sauce of your choosing
Toppings (we used sausage, black olives and pineapple)

Directions:

– Grate your cauliflower. I used a food processor with the grater blade (cause you don’t want it to become pureed, just shredded). Place the grated cauliflower into a medium microwave-safe bowl and microwave for 6-8 minutes (depending on your microwave). You want to make sure the cauliflower is soft but not mushy. Do NOT add water or anything to the cauliflower.
– While the cauliflower cools off (I put mine in the freezer to cool it quickly), preheat the oven to 450* and prepare a cookie sheet or pizza pan by spraying it with cooking spray. This is also a good time to prepare your toppings.
– To the cauliflower add 1 C shredded cheese and spices and combine. Add egg and mix well with your hands. Press the crust onto a pan and shape into a 9-12″ pizza (depending on how thin you want the crust). I did mine closer to a 12″ and it worked great! Spray the top of the crust with cooking spray (to help brown) or brush with oil.
– Bake the crust for 15-20 minutes (or until golden brown). It is really important to get it nice and brown so that it has a crispness to the crust otherwise, the texture isn’t a convincing pizza crust! When you pull out the pizza, turn your oven to broil.
– Add your toppings (we did 1/2 sausage and 1/2 pineapple/black olive) including 1 C cheese and put pizza under the broiler for 3-5 minutes. Just broil it long enough to melt the cheese and caramelize the toppings a bit.

 

Roasted Garlic Cauliflower

Makes 6 servings

Ingredients:
2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
Salt and black pepper to taste
1 tablespoon chopped fresh parsley

 

Directions:
– Preheat the oven to 450 degrees. Grease a large casserole dish.
– Place the olive oil and garlic in a large Ziploc bag. Add cauliflower, shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.
– Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.

Super Bowl Snacks – Game Time Treats!

For the past couple of days we have talked about one of my favorite things – really fun Super Bowl parties. We talked about how much I like them and how we try to include everyone, making it fun for kids and adults. One of the ways we do this is with the food. It is fun to have fancy, adult party food; we usually get some very amazing catered food from a local Mexican restaurant. But it is also fun to have finger foods and snacks kids like too. Super Bowl snacks are all about fun, yumminess and going a bit crazy.

 

Some of our favorite Super Bowl snacks are ones that you have probably had before. Some may be new ways of making a familiar snack.

Chex Mix

  • 3 cups Corn Chex cereal
  • 3 cups Rice Chex cereal
  • 3 cups Wheat Chex cereal
  • 1 cup mixed nuts
  • 1 cup bite-size pretzels
  • 1 cup bagel chips, broken into 1-inch pieces
  • 6 tablespoons butter or margarine
  • 2 tablespoons Worcestershire sauce
  • 1 ½ teaspoons seasoned salt
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder

 

In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

 

Substitution: The original recipe includes Corn Chex, Rice Chex and Wheat Chex. You can mix and match to suit your taste, just use a total of 9 cups of cereal.
Get Healthy: To reduce the fat to 2 grams and the calories to 80 per serving, use 3 tablespoons margarine instead of the 6 tablespoons butter, omit mixed nuts and use fat-free bagel chips.

 

Grape Jelly and Chili Sauce Little Smokies

  • 1 package Little Smokies sausages
  • 1 12-ounce bottle chili sauce
  • 1 18-ounce jar grape jelly

 

Use a slow cooker. Put the Little Smokies and the sauces in the slow cooker. Stir to combine. Place the cover on and cook on low for 4 hours, or high for 2 hours. Make sure the Little Smokies are heated all the way through. Serve on toothpicks or right out of the slowcooker.

 

 

Super Bowl Sunday Sundaes
No real recipe here – just make really awesome ice cream sundeas and call them this fun Super Bowl themed name. These are perfect Super Bowl snacks. Make them at half-time when it is more likely that everyone will be up and moving around.

 

Make Pizzas
Another of our favorite Super Bowl snacks doesn’t require a recipe. Make football shaped mini pizzas by using canned biscuit dough. Top with sauce and cheese, add some chopped olives or sliced pepperoni to make the pizza look like a small pizza. These Super Bowl snacks are party favorites.

 

Don’t Forget the Veggies
Having a veggie tray is a great way to keep a healthy option in your Super Bowl snacks. Keep the veggies cut to finger food sizes and serve with a fun dip or two. Party tip – putting a spoon in the dip discourages guests from standing too close to the tray and double dipping. Try it.

Make the Best Chocolate Chip Cookies!

I will admit, I don’t do a lot of baking. It is not one of my favorite things. But when I actually do bake, I try to find the best recipes and use those. I definitely have some favorites. For the longest time, I have had a select few that I treasure. I even have some that I have kept top secret. My chocolate chip cookies come from one of those kinds of recipes. My chocolate chip cookies are actually pretty well known and they are requested all of the time. When I go to a party it seems people always ask me to bring my chocolate chip cookies. For years I have touted my recipe as “Top Secret” and kept those famous chocolate chip cookies as my “thing”. Today I decided to share that recipe with you all so everyone can make awesome chocolate chip cookies.

 

Guess what? My recipe for chocolate chip cookies isn’t really that big of a secret! It is right from NESTLÉ and was originally featured in a magazine ad. It is all over the internet now and anyone can make great chocolate chip cookies if they follow this EASY recipe. Try them! You will love them – so moist and good. These chocolate chip cookies are the best.

 

INGREDIENTS

  • 1 cup all-purpose flour
  • 1 pkg. (4 serving size) instant vanilla, butterscotch or chocolate pudding mix
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 large egg
  • 1 large egg white
  • 2 cups (12-oz. pkg.) NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels

 

INSTRUCTIONS:

PREHEAT oven to 350° F.

 

COMBINE flour and pudding mix in small bowl. Beat butter in large mixing bowl on medium to high speed for 30 seconds. Beat in brown sugar and baking soda until well combined. Beat in egg and egg white. Gradually beat in flour mixture. Stir in morsels. Drop dough by rounded teaspoon 2 inches apart onto ungreased baking sheets.

 

BAKE for 10 to 12 minutes or until set. Cool on baking sheets 2 to 3 minutes; remove to wire racks to cool completely.

Cookie Bars – So much easier than making cookies

cookie barsI tend to be the person that is asked to make cookies for EVERYTHING!  I have a super yummy cookie recipe that is almost TOP Secret! I might share it with you tomorrow.  It seems like a I am always super busy and making cookies seems to take so much time!  I have resorted to making cookie bars more often than cookies.  They taste great and the time savings is great.

Every once in a while I will cheat and use a cookie mix.  My favorite cookie mix for making cookie bars is the Krusteaz Sugar Cookie Mix.  I use 2 or 3 mixes for a big jelly roll sheet.

Here are some cookie bar recipes that some of our great PYP members have shared:

Butterscotch Cookie Bars

1/2 c butter (1 cube)
1 1/2 c graham cracker crumbs
1 c chopped walnuts
1 can sweetened condensed milk
1 c chocolate chips
1 c butterscotch chips
1 1/3 c coconut

Melt butter in 9×13 pan. Layer ingredients in order listed. Heat milk (it will pour easier). Bake at 350 degrees for 25 minutes.

Magic Cookie Bars -(These are my families favorite)

1/2 cup(1stick) butter or margarine
1/2 cups Graham cracker crumbs
1 can (14oz) sweetened condensed milk (NOT evaporated milk)
2 cups (12oz) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped walnuts

Preheat oven to 350 degrees (325 for glass dish). In 13 X 9 inch baking pan, melt butter in oven.

Sprinkle graham cracker crumbs over butter; pour condensed milk evenly over crumbs. Top with remaining ingredients; press down firmly with fork.

Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store at room temperature.

Raspberry Cookie Bars

1 package (18 ounces) refrigerated sugar cookie dough, softened (recommend Pillsbury)
3/4 teaspoon lemon extract
1/2 cup seedless raspberry jam
1/4 cup chopped pecans ( sometimes I use walnuts_

Preheat oven to 350 degrees

Line an 8 inch square glass baking dish with enough foil so there is a overhang on 2 sides. Mix cookie dough with lemon extract, kneading to combine. With damp fingers, press 2/3 of dough into the bottom of prepared baking dish. Spread jam over dough. Crumble remaining dough evenly over top of jam. Scatter pecans over top. Bake for 30 to 35 minutes or until browned around edges and cooked through in center. Let cool in pan. Lift
edges to remove bars. Cut into 2 inch squares or diagonally into pennant shapes.
