Homemade Eggo Waffles

I’m sure most of you already do this. I thought I would do a post on it anyway because maybe there is someone out there who could use this idea.

When you make homemade waffles or pancakes for breakfast, double or triple the batch on purpose. That way you can freeze some for later. Whalla! Homemade “Eggo” waffles.

We had homemade wheat waffles with cinnamon syrup for breakfast this morning. I made 20 extra waffles, fit them in this Ziploc bag, squeezed out the extra air, and now I have a few breakfasts done during the next few weeks. I love it!


Doing this does take a little extra time, but it’s worth it! Your family is getting homemade goodness instead of the stuff from the store that is full of high fructose corn syrup, hydrogenated oils, and artificial colors/flavors. You know what is in these…you made them! And, it really does save money. You may think that box of Eggos at Costco is a good deal, but if you make waffles from scratch and freeze them yourself, it is still much, much cheaper.

  2. I've tried keeping pancakes in the fridge until even later in the day, and they get soggy and gross. Does freezing keep the quality good enough for even pancake connoisseurs? Do different recipes work better than others?

  3. Do you have problems with them sticking together when you thaw them? I've done this with pancakes and it worked great, except for getting them apart. Any tips?

  4. TO keep them from sticking together just place a piece of waxed paper in between the layers.

  5. When I do it I thaw them quickly for a few second in the microwave then pop them in the toaster. It works for us!

  6. I wrap mine in waxed paper before I stick them in the freezer. I never have a problem with sticking together.I have also used different pancake and waffle recipes and never had a problem. When I make pancakes and waffles I freeze them right away and quality is fine.

  7. You can also put the batter in the fridge in an old ketchup bottle Or any old plastic bottle you have left over) and just shake when you are ready to make some. It keeps for about 2 weeks.

  8. I freeze mine in a single layer on a cookie sheet, then transfer them to a bag. They don't stick!

  9. I do this with a lot of recipes. Many things freeze and re-heat well. Saves so much time and money!

    I agree with putting them in the toaster – I think they're better that way.
